    THIS MAY BE THE SINGLE SHARPEST KNIFE BLADE I HAVE EVER TOUCHED.
    I opened the box containing this Yotsuba-brand damascus steel chef’s knife, and admired the mirror-polished damascus steel blade, and the sharply contoured rosewood handle. It looked very nice, and seemed quite sharp right out of the box. I decided to hone the blade on my ceramic rod, just as I usually do, and it did seem to improve the edge just a bit. Then I turned the knife over in my hand, and carelessly allowed my thumb to touch the “heel” of the blade edge. Instant cut, followed by a blood flow that showed the wound to be longer and deeper than I would have believed possible. I was amazed.I am not a knife expert, but I own a couple of dozen cutting tools of differing levels of quality, etc. I prefer working tools to knife jewelry. This is the most finely finished blade I own.The stainless steel/high carbon steel “Damascus” forged blade is thin, with an amazingly long bevel grind right down to the cutting edge. The tracery in the steel, typical of the damascus process of folding, hammering and forging the layers of steel into a blade blank before the grinding and finishing process, is delicate and quite attractive. According to the manufacturer, the blade is hardened to a grade of 62 on the Rockwell scale, and polished right to a mirror shine. This is one fine knife, I think.I will say that the long, long tapered bevel grind is remarkable. The edge is perfectly even, end to end. My honing process simply touched up the polish of the blade edge, removing any oxidation that might have occurred since the day of manufacture. This knife may be “made in China”, but the craftsmanship is excellent. I LIKE it.

    Best knife I’ve ever owned
    Wow was I impressed with this knife. It’s become my new favorite knife. First, it looks so good. The blade itself has a hammered finish with etched scrollwork down to almost the cutting edge. Apparently, the hammered surface not only looks good, but it keeps food from sticking to the knife blade. The handle is a beautiful wood finish that feels great in your hand. The cutting blade is super sharp and is made of Damascus high carbon steel. I was able to slice through thin skinned tomato with ease. Everything I used this knife on was so easy to cut through. I used it on hard vegetables like carrots as well as soft like tomatoes. I used it on chicken and beef with no problem. It comes packaged in a beautiful presentation box that makes it a perfect gift. I love this knife so much I bought it as a gift for a family member.

    Sharp. REALLY SHARP.
    Review is for YOTSUBA 8 inch Japanese Gyuto Chef Knife,Professional Hand Forged Damascus Japanese….While this product all over makes sure you think this is a Japanese knife, crafted in Japan by top notch knife makers, it is made in China. I searched before I ordered it, and figured as so, but wasn’t completely sure until it arrived.Thats not to say that this knife isn’t well made, but keep in mind I am not a knife expert by any means.HOWEVER.This has got to be the sharpest knife I own. We are talking razor sharp. Will that edge last after extended use? Who knows, and that is the reason for 4 stars.The knife looks impressive, is comfortable to hold in the hand when in use.My son used it to cut some meat, and the first thing he said was, “boy is this knife sharp”, he also has a Japanese crafted knife he bought while in Japan and had the knife maker sharpen it for him while he waited. The price is high I think, for my price range….but if the knife holds up and the edge stays sharp, I think at a minimum, this would make a great gift for someone….or if you just want a good looking, ultra sharp knife, with good weight and balance, this would fit the bill.It comes in a nice box, perfect for storing. Due to the sharp blade, I would NOT just throw this in a knife drawer.

    Really nice cutting/chopping knife!
    Right out of the box this knife is SHARP!! I tested it on a note card (see photos) and it cut cleanly and easily. I’ve never had a kitchen knife this sharp even after sharpening them myself, but this one definitely did not need sharpening. Be careful using it, and keep it away from children!It also looks fantastic, has a nice Damascus pattern on the blade, the handle is comfy and the overall weight is good and it handles well.I tried it out on an onion and was really impressed with how thinly it could slice it, and how effortless it is. After slicing it I then diced the slices and again it was fast and easy. I also used it to cut roast into chunks for a stew and it was just as smooth and easy.Really a great kitchen knife!

    Looks okay. Not balanced.
    Out of the box, it’s acceptably sharp. Easily cut a few vegetables, fruits, and steak with it.The handle feels exceptionally cheap and is somewhat uncomfortable to hold. It holds the blade firmly right now, but I don’t suspect that it will hold up over time with heavy usage.I don’t think this is an advisable purchase, but if you’re on a tight budget or looking for something functional that you don’t mind losing, this might be okay.
