I’ve been on a quest to replace our unhealthy PFAS cook wear, which included the wok. It’s especially important with woks because they work best with very high heat and metal tools. In the past I also had a stainless steel wok. I modified the lid from my previous wok to fit this one. I highly recommend a metal lid. You will need it for steaming, making popcorn, keeping things warm and so on. I bought the tools which I also highly recommend. I use the spatula every time I cook with it because the curve of the tip perfectly fits the curve of the wok.I have been a long time user of antique cast iron pans. If you are familiar with their care and use you will find this wok pretty much the same, except it’s okay to scrub it with soap and hot water. It doesn’t loose it’s non-stick characteristics as badly and is easy to wipe down with a paper towel and oil afterwards. I always do this and then heat it up on the stove before putting it away. If nothing is stuck to it I just wipe it down and put it away like you would cast iron. Stainless has issues with sticking and using more oil while cooking. With a little oil nothing sticks to this wok. It doesn’t stay warm as long as the cast, but with the lid on it’s not a problem. You will appreciate that it doesn’t weigh as much.Some tips for using your wok.1. Have a big burner. It works best with high heat, especially when making large portions.2. Use some oil and get the wok up to temperature before adding ingredients. Peanut and sesame oils seem to work the best for me.3. Add your ingredients according to how long each takes to cook, like carrots before kale.4. Rub it down with oil and burn it a couple of times before using it the first time and once after using soap on it.6. You can make better stir fry sauce from scratch then you can buy at the store. Add the sauce after everything is cooked and thick it with corn starch.5. It’s not necessary to use soap on it every time, but it it’s full of sticky sauce go ahead and do it.

This is my first wok and so far it is good. The steel is substantial but not too heavy to work with. I bought the utensils as well and they are a game changer – so good. Nice purchase.
