    Superior Chef’s Knife
    First, allow me to clarify another user’s review- this is NOT A SERRATED KNIFE- it is HOLLOW GROUND, i.e. the knife is scalloped along the cutting edge along both sides of the blade to cause aeration while cutting, so things don’t stick as easily to the blade.I cook professionally. I use a chef’s knife about 6 hours a day out of my 15 hour workday, 6 days a week. I spend more time with my knives than my fiancee, and as anyone in the food industry knows, having a knife that is durable and comfortable, yet precise is of the utmost importance.Many of my colleagues use japanese knives- MAC, specifically. These are excellent knives, and while they are precise and elegant, they are fragile- not the type of equipment to use while breaking down whole sides of veal or lamb. Nor are they what you want to use when small dicing case upon case of butternut squash. You want a broadsword, and this beautiful knife from the Wusthof IKON series is the culinary equivalent.I was working a restaurant opening in Charlotte, NC several months ago as afavor to another chef when my old (3 years) Wusthof 8″ Classic series chef’s knife died on me- The blade was worn, but still fine, but another cook/idiot destroyed the handle of my knife, rendering it unusable. Having been completely satisfied with Wusthof in the past, ordering another Wusthof product over another brand was not really a question. The Tournad at the restaurant was using the Wusthof IKON classic 7″ Santoku, and I was immediately impressed both with the design of the handle and the comfortable weight(The weight is noticable, but not heavy- pleasently comfortable) and feel of this blade in my hand. So I ordered the 8″ hollow-ground chef’s knife that evening (early morning, to be more accurate- i think we finally got out of there at 3am). I borrowed knives for the rest of my time there.After i returned home and received my new knife, i immediately put it to the test. Straight out of the packaging i was able to cut paper-thin slices from very soft heirloom tomatoes- an impossible feat for any lesser knife. But nothing compares to a factory edge, so i waited… 2 weeks and hundreds of pounds of meat and produce later, i still hadn’t had to take a steel to the blade. And when i did, it only required a few light passes over my heavy diamond steel to return this blade to factory edge quality.This is the best knife i have ever used, and will be replacing my current Wusthof Classic collection with Wusthof IKON classics. The curved handle and attractive bolster that are the stylistic hallmarks of this series are elegant, the steel is superior, and these knives are STRONG- wear, heat, grease, staining foods, drops- nothing hurts this knife. It may not have the exotic beauty, lightness of weight, or intense precision of japanese knives, but if you need a beautiful knife and a workhorse rolled into one, this is the knife to get.

    It’s a Wusthof baby!
    I mean, what needs to be said, the name says it all, it’s a Wusthof! It’s quality, well balanced, with a nice hilt. Fits perfect in the hand, even with my smaller hands and waning grip it fits and holds very nice. And that blade! Awesome! The rivets are well made and polished down to the handle nicely. The handle has a smooth grip yet easy to hold onto, which makes using it for a longer period of time easy. And a fantastic warranty.This is the second knife in the Classic Ikon line that I have gotten, and I just can’t say enough about how they have made me happier in the kitchen. I look forward to using them every day. (I even HUNT for things to slice and dice. Haha) There are 3 more in this line that I will be getting as I phase out part of my Zwilling J.A. Henckel set. (Go. Get. Your. Wusthof.)!

    As good as it gets
    I’ve had this knife for over a decade, and when my daughter had a wedding shower it was an easy decision to get one for her. She’s started to really enjoy cooking and having a ‘real’ knife is one of the best investments you can make (don’t forget to also get a honing steel and a whetstone).I like this over the Classic line because the bolster doesn’t go all the way down to the blade, which makes sharpening easier. With the full bolster on the classic one, if you’re not super careful not to hit the whetstone with the bolster you can damage the whetstone, and with the Ikon you don’t have to worry about that.Other than that, this knife is as solid as they come. I’ve done everything with this knife, from micro-mincing garlic to rough chop watermelons to butchering chickens, this knife does it all with ease. Hone it every time you use it, sharpen it regularly, and you will have a cooking companion for life. I love the balance in my hand, better than the Classic ones. You should really go to a proper store and try them out yourself because there are real differences, but cannot go wrong.It’s definitely pricy but it’s worth every single penny.

    Fabulous knife!
    This is a great knife! The balance is excellent. The handle is affixed perfectly to the blade and feels like an extension of my hand. The handle is the same material as the Classic series if you’re familiar with the product line. The blade was razor sharp – although if it wasn’t, I wouldn’t complain because sharpening knives is part of cooking.I bought it a present and am very jealous, it makes me want to replace my Wusthof Classic knives even though they are in excellent shape after 20 years of daily use.As an added bonus, Wusthof has a life time guarantee and honors it. The handle on one of my knives cracked a few years ago and they replaced it, no questions asked.

    Awesome knife!
    Finally broke down and purchased a Wusthof chefs knife. This is without a doubt, the best kitchen knife I have ever used. Period. The price point is a bit high but in this case, you truly get what you pay for. I can slice as razor thin as I want. When the blade touches the tomato, onion or anything else it cuts like a razor blade.I will slowly build my personal collection of Wusthof knives. I would definitely buy this again.

    Very sharp and feels good in the hand.
    High quality and very comfortable to hold and use. Cuts micro thin tomatoes without smashing them. If you’re thinking about what size is right get the 8”. I have a 6” as well but the 8” is far better.

    Solid Chef’s Knife
    I needed a solid chef’s knife to handle heavier tasks than I wanted for my Japanese knives. My 30 year old chef’s knife developed a crack, so it was time for a replacement. This fit the bill.I love that I can touch up the edge from tip to heel without the interference of a bolster. It’s a good value for your money. I do recommend this knife.

    We have several Wusthof knives from their Classis Ikon series and couldn’t be happier with them. Yes, they are a bit on the expensive side, but when you buy Wusthof knives, you are buying them for life. If taken care of they will last for many, many years. Well balanced, easy to maintain and takes an edge very well.

    Desde que lo sacas de la caja te das cuenta que es un producto excelente. El filo es altisimo, el cuchillo se pantea muy levemente y corta lo que sea con presión leve. Me gustó mucho el detalle de que incluye un plastico para proteger el filo de caidas, ese plastico lo conservo. Si haces la prueba del papel o del jitomate la pasa sin problemas, aunque lo que si me sorprendió bastante es que no es difícil picar y rebanar cualquier alimento tan chico como quieras. Simplemente haces el corte y divide.
