A Great Alternative to Kyocera Knives
The 6″ Shenzhen Chef’s Knife is a great product, and the price s a great deal easier to pay than the price of a comparable Kyocera knife. A couple of years ago I decided to buy a Kyocera knife for my wife, who makes hundreds of egg rolls many times a year. Her steel knife was no sharper than a butter knife after innumerable rounds of vegetable prep for her egg rolls, and I thought I could make her chore easier. It turned out that the knife was just what she needed, and that it made the job a far easier. Well, that was 2 years ago, and despite the fact that ceramic knives hold their edge better, even they get dull. When looking to get her another new ceramic knife, I stumbled on the Shenzhen Chef’s Knife. Ceramic is ceramic, so I figured out that this would work as well as Kyocera. It turns out that it is comparable in every way, but the price. Both knives are ergonomic, and both knives are sharp enough to shave (when new). I have since discovered that there are sharpeners made specifically for ceramic knives, which may lengthen the time between further purchases of these excellent knives. But, if you don’t have one, and you need a truly great knife for slicing vegetables, fruits, and even boneless meat, this is the way to go. If anybody asks me for my suggestion, I will enthusiastically recommend a Shenzhen ceramic knife. Get one and see if you don’t find how nice they are. UPDATE: It is now Feb 19, 2021, and we still have our knife. It’s not quite as sharp, but is still in one piece, and functioning. Reasonable caution will prevent chipping or breakage of the tang. Sudden lateral forces, or trying to use it like a cleaver, will likely break the blade. The ceramic material is far stronger than steel, but because it is far higher on the Rockwell hardness scale, it is much more brittle. After 10 years, I’m still happy with my purchase.

cuts well but developed small chips over 5 months of use
I bought this because I wanted to experiment with a ceramic knife. This is an excellent all around. It maintains a great edge and you dont have to steel or sharpen it. It is light and easy to hold. It doesn’t have the same heft as a steel knife so it’s not a good chopper through thick material. This tool is perfect for veggies and boned meats. The reason why I gave it 4 stars is because I have noticed little chips on the blade lately. I understand that ceramic is more brittle than steel and i have made sure not to put too much strain on the edge so I am assuming these chips came from normal usage. However, this knife still cuts very well despite the damage. It will probably need to be replaced in a year or so. But, overall, I’ve had a good experience with this brand of knife. It’s cheap and I don’t mind replacing it in the future.

    Truly Excellent Quality Ceramic Knives
A while ago I did a stupid thing and tried to cut frozen food with my Kyocera ceramic knife. I don’t know why. I just forgot. So, of course, the blade chipped badly, and I had to throw it out. So …. then came the daunting task of picking a replacement. You know, there are so many choices at Amazon, and so many reviews to read. I picked Shenzhen for no particular reason. I sort of liked the way the handle looked, and I liked the price. So I ordered them. Well …… I’m totally satisfied! These knives are great, super sharp, good looking, and well balanced. You know a knife is sharp when it perfectly slices a very ripe tomato! Don’t be put off by the low price compared to some other brands. These are excellent quality knives! I was also very pleasantly surprised by the intelligence put into the “Care Instructions & Warranty” sheet. They actually took the trouble to explain that “ceramic knife sharpeners” are “MADE OF ceramic, and are meant to sharpen STEEL KNIVES.” To sharpen a ceramic knife you need a diamond sharpener! This is important information, and it took me quite a bit of time and research to learn it on my own. The Shenzhen Knives people tell you upfront! I’m impressed.
