Higher quality steel than your average kitchen knife
Purchased the rosewood variant for myself about 7 months ago, since then I use it regularly at home, cooking at other’s houses, and at work in the kitchen. The first thing you’ll notice is how shiny it is, even after 7 months of use it is extremely shiny.It is perfectly balanced right where you should pinch the back of the blade for a proper grip, and is noticeably lighter than your average fibrox grip kozini knife. The back of the blade is about as thick as a kozini, but instead of being one big fat piece of metal with a bevel along one edge the entire height of the metal tapers down to the edge, allowing it to get significantly sharper and stay sharp longer than a fat blade.I haven’t noticed any strange smells from the handle as some reviews say, but mine has never seen a dishwasher. Dishwashing a wooden handled knife will damage the wood over time, always hand wash. I have noticed a slight opening on the handle where food can get caught, so be sure to pay attention to the nooks and crannies while cleaning.Unfortunately I have dropped it twice onto kitchen tile, once landing on the side and once landing on the edge (not the tip). The edge got some minor chipping that was reduced to just visual scratching after a few sharpenings. The edge cuts as cleanly as the day I opened it when properly sharpened and honed.It’s not the fanciest knife you’ll ever buy, but it is a high quality knife at a price where you can comfortably use it in the workplace. Just don’t let the new guy pick it up, or he’ll cut off his fingertips.

Sleeper knife
Knife looks so simple and unassuming, yet performs like a champ. Razor sharp and light as a feather, I can tell this knife is from an extremely hard and brittle streel. Edge retention is phenomenal. I prefer the lighter weight when I chop.

I am not a super chef, but am a bit of a knife fan who of late has been doing TONS of research on knives, kitchen and otherwise.I am going to start with the one annoying thing, and it is a very common annoying thing. The packaging is the gawd-awful plastic clam shell. I hate it to the deepest core of my blacken soul. In the name of all that is decent could the manufacturer please just put it in a lil cardboard box that is easy to open. Please…Now the good…First impression: pretty, the rosewood handle is quite nice with a lovely wood grain. The blade is shiny and mirror like at high angles, a very dull mirror like straight on. Decent amount of weight, but not feather light, which I like. The feel of the handle is fantastic. I am not a petite fellow, and normally wear large to xlarge gloves, for whatever that means, and the handle felt great in my hand. Full, good width and length. Just felt great. I could wax poetic on the fullness of hand and supple curves for moments on end, but just let it be known, this is one of the better feeling knives I have held, yet that does encompass a very small sample…. tldr, it feels good.Came pretty frickin sharp. I am sharp freak, I have stones, and sharpen pretty regularly, at least compared to all others I know who NEVER sharpen their knives. My first cutting was for breakfast, so not a lot of stuff, but a couple of jalapenos and a big bell pepper. I did not need to do any more than direct the knife, no pressure and it sliced through, thin and thick slices, lengthwise, just glided through with no pressure other than the knife. I was pretty impressed.Also, for other largish handed individuals, one thing that many of us encounter with knives is the depth of the blade is so shallow, that when chopping/rocking our knuckles/fingers bang into the cutting board. In my limited experience so far that has not been an issue at all, good clearance with the slightly taller blade.All in all, the reviews that rave on and on are well worthwhile. If you are considering it, other than that crappy clam shell packing, it is a great knife, go for it.

Full Tang, Beautiful wood, Craftsmanship
I love allllllll of my Victoronix items. I have commercial kitchen grade knives, I have full tang spatulas, and recently added this knife to the collection.The versatility and sharp edge are exactly what one needs for flexibility in the kitchen. The value of this item is truly under stated as it will last a lifetime if cared for properly.I love this style of handle and the quality of wood. It reminds me of the set my dad was given from his kitchen staff. Sadly that set was lost, but items like this bring back those fond memories and allow me to cut with the quality precision one needs in the kitchen.

Victorinox Rosewood handle 8-inch Cook knife.
A sharp knife that is easy to sharpen time and time again. I use this knife at work to prep vegetables, meats. The handle is very nice and very easy to maintain a light coat of mineral oil to keep the handle from drying out.

I wish I could give the knife 5/5 stars, but I’ve had some issues with the handle.Other reviewers have mentioned an odd smell from the handle and I have also experienced this. Doing some digging and hypothesizing, my culinary-inclined friends and I have determined that the handles on some of the rosewood handled knives may not have been cured properly, which is what results in the odd smell. These knives are machine-made, so something as simple as the output for one of the curing solutions being set too high or too low could have resulted in them not mixing correctly, resulting in an improperly-cured, funny-smelling wood handle. It’s also something that wouldn’t be caught by QC because smell is hard to pick up in a factory situation that is undoubtedly filled with all sorts of smells.That said, I LOVE the Victorinox knife overall. I had to return my rosewood handled one and bought the plastic-handled version instead and have loved using it. As a beginner chef, it’s a perfect first chef’s knife; an excellent knife for a very affordable price. You won’t find a better knife at this price, not brand-new anyway.
