2 quart saucier is a near perfect size.
I got this Hestan specifically for the rivet-less design and great price. It was marked down about 20% for some reason. After a few months of use this is becoming my favorite pan for heating up some soup or making sauces.I own both types and the open rim, rounded bottom and rivet-less handle makes stirring and cleanup very easy. Strait wall and 90 degree bottoms are hard to reach and rivets are always a pain to clean round.I can confirm it works well on induction

    High Quality
An excellent pan! The quality of construction is reflected in the weight and finish of this utility pan. For example, what are typically rounded rivet heads inside a pan, are, in this case perfected to a smooth finish. This makes it to clean. The pan takes heat evenly and with uniform distribution. The non-stick surface is durable and solid. This is a pan that will stay in your kitchen for many, many years, which is why the price, over time makes it a great bargain. You will enjoy cooking with this pan and be happy that you have it in your kitchen. As we have.

    Works great with steam release
I bought this for my daughter and she loves it! Works very well and she likes the holes that release a little steam. She recommends it.

    A Great Little Pan
I’m neither chef nor good cook but this is one nice frying pan & worth the extra dollars. It’s very well crafted, with a good weight & even looks cool hanging on the wall.So far food doesn’t stick,it’s easily hand washed. It’s a great all purpose pan.

Has its place in your kitchen
The Hestan universal lid is a great addition to the kitchen, even though it doesn’t form a perfect seal. It’s incredibly handy when you don’t want to scramble for the right lid, and it lets out just the right amount of steam, making it perfect for cooking dishes like risotto or steaming vegetables. I’ve even used it in place of a parchment paper lid, and it works nicely. The build quality is excellent, it’s hella solid, and it feels like it’s made to last. One of my favorite features is the hook on the handle, which allows me to hang it neatly with the rest of my pots and pans. It’s a versatile, well-designed lid that earns its spot in any kitchen. One last thought, I would argue that even if you don’t have the pot pan set the lid so long as it fits the diameter of your offbrand pot and pan would still be a good fit

Work great, but seem to scratch easily
I’ve owned lots of pans in my life. These cook great. They heat up very fast, and as long as you do it correctly, they are basically non-stick. They seem like they have a bit more cooking surface than the All Clad pans I replaced. The flush rivets are nice, but a tiny bit of food can still get in them. My only complaint is that they are already very scratched up after a month or two of use. It’s just cosmetic and doesn’t affect anything. But my previous pans took a lot longer to look this scratchy. Not a big deal, maybe the Hestan titanium coated ones don’t scratch.

BEST EVER – Quality & Thoughtful Design
Hestan is superior to ALL others. I would buy these again & again, but these might last forever!High quality and EXTREMELY thoughtful design. The attention to detail is amazing! The handles FEEL natural in your hand (unlike AllClad) and have a little finger hold for extra grip – this is more important than you think; the interior rivets are flush and so easy to clean; universal lids are convenient and space saving; brushed exterior finish hides fingerprints/drip marks so much better than polished; weight of pots/pans is perfect; pots come to a boil quickly; pans distribute heat evenly; everything down to the manufacturing of the layers – they way they are formed together and sealed – Hestan thought of everything!BEFORE YOU BUY – 1) research cooking with stainless steel! It’s easy, but different than nonstick; you need to see water droplets exhibit the “mercury effect” before putting anything in the pan. 2) learn how to care for stainless steel. Main rule: don’t create dramatic temperature changes. Like all stainless steel, these require a “deep cleaning” with BarKeepers Friend every few months to maintain appearances – super easy and inexpensive.Fun fact – the owners of this company (husband & wife) tried to purchase AllClad many years ago. When they were turned down, they decided to design their own stainless steel line — but even better 🙂

Thomas Keller Saucier Pan:First: Made in Italy and it doesn’t get any better than that. EXCELLENT very high end stainless steel quality and design! I should point out that I did a lot of research on Saucier Pans before deciding to buy this one.Second: It’s virtually non-stick. I own a few Cusinart Teflon coated pots. It is as non-stick as those despite being stainless steel not Teflon. Heats evenly and to perfection. Cooks beautifully! Have seared shrimp for scampi using this pan. Have made creamy Alfredo Sauce in it. The food cooks without sticking to pan. Saucier design is the ultimate for whisking sauces as pan bottom sides are curved. Design of pan top edge makes for easy drip free pouring. Sauces turn out perfect in this pan. Non stick was not the situation with other brands of stainless pots I have owned, that had caused food to stick horribly to those pots.Third: It’s dishwasher safe. Most saucier pans sold are not. First time I washed it in dishwasher it came out with what looked like a white film in bottom of pan and slight rainbow streaks that stainless steel can get. I was thinking oh no, I will need to hand scrub this pot – but NO that was not the case. I simply ran hot tap water in pan and wiped it dry with a clean dish towel. No scrubbing required! It was then 100% returned to shiny stainless steel as if right from the factory! I could not believe it – even the slight rainbow streaks disappeared with just hot water. And next time I used the pan it was still completely non-stick stainless steel.Fourth: Several of my other cookware pots have glass covers in size that fit perfect on this pot, so having no cover included with this pan presented zero issues for me. You will pay more for another brand that includes a cover. Not worth that extra expense.Fifth: The size (2 quart) is the PERFECT size for a saucier pan. Not too big and not too small. And the weight is excellent – not too heavy at all – but not so light that it feels cheap. It was super easy for me to lift pan when 80% filled with a hot sauce, and pour it while using rubber spatula to scrape out the pot (and I have arthritis so I have often found that process harder when using some of my other cookware).Sixth: The price. I am definitely not one to ever spend $200 on a single pot. But I heard such good things about using a saucier pan that I wanted to invest in a quality brand of one. I would 100% spend this same money again to buy this identical Thomas Keller Saucier Pan, if I ever had it stolen or somehow damaged etc lol, because in my opinion this was money very well spent for an exceptional and totally essential pan, for any home cook to further elevate their skills. I now feel like I don’t know how I cooked for so long without owning this incredible Thomas Keller Pan!In summary, just go ahead and click the button to buy this Thomas Keller Saucier Pan! You will quickly find it becomes your favourite pot when you go to reach for cookware. The quality and features of this Thomas Keller brand are not matched by any other brands I have seen. This purchase is SO worth it! You will be thanking me for the next 40 years because that’s how long I believe this beautiful saucier pan will last!UPDATE TO THIS REVIEW:This top quality 2 quart Saucier Pan by Thomas Keller continues to impress. I have been using it almost daily since purchasing it a month ago. It is wonderful for making a roux – the butter and flour combine and cook on low for about 10 minutes. The roux appears to have a thin layer that is sticking to bottom of pot towards the end of the ten minutes – however, I add the liquid and whisk it with the roux, then allow the sauce to thicken, whisking occasionally. When I pour the sauce into a bowl, there is NO roux residue left stuck inside the pan. The roux that appears to be sticking to pan in the beginning, instead easily lifts when liquid is added, and then becomes fully incorporated into the sauce.Another time, I cooked some finely diced bacon in this pan, as the first ingredient of another sauce. I got busy elsewhere and had heat a little too high, and as a result, the bacon ended up stuck to the bottom of the pan. I scraped it up with a wooden spatula but there was still a thin layer of stuck on crusty bacon residue that was not releasing with the wooden spatula. However, I continued with the recipe, and added the next ingredient, which was chopped mushrooms. Within a minute or so of just stirring and starting to cook the mushrooms, I noticed that the entire bottom of the pan had released all of the stuck on bacon residue. I continued to add the other ingredients and made an amazing wine and beef stock based sauce. I used a rubber spatula to assist pouring sauce out of pot, and the entire bottom of pot was left without anything stuck to it. I put pot in dishwasher and it again came out looking brand new and non-stick!So far, nothing stays stuck to this pot! The stainless steel finish of this saucier pan is so superior to any other stainless steel cookware that I have ever owned. I still strongly recommend this wonderful Saucier Pan!

I have been shopping around for new pots and pans for quite a while. My last set was very expensive but not terribly durable. This set, on the other hand, is such good quality and the construction seems to be made with an eye to longevity as well as excellence. I’m very happy that I finally decided on this set.

The cookware is nicely designed and well made. Unfortunately, what I suspect was meant to be aninnovative lid system, falls quite short. I often have numerous pots and pans at work simultaneously. This set comes with 2 lids, so I’m out of luck if I need more than two lidded pots, And the two provided lids do not fit all the pots. As for the pots they do fit, they sit precariously on top. I hold Thomas Keller in high esteem, so I want to believe that this poor design feature was the brain child of someone else. If I was more of a cynic I might suspect it is a material cost saving tactic. In any case, the lids are pretty bad. I now have to source some proper lids which will fit this cookware. For a cookware set of this price point, this is a huge disappointment.
