Outstanding Quality
I have to say that this is the best chef knife I have ever owned. The 9CR18MOV high carbon clad steel forged blade is much harder and tougher than stainless steel and will retain it’s cutting edge much longer. The fitment between the handle and tang fits perfectly without gaps between the parts. The weight is a touch blade heavy which I like very much. The cutting edge is razor sharp and its thin blade makes cutting nearly effortless. I’ve told all of my friends and family about this knife and several of them have purchased this knife and the steak knives as well. The box the knife ships in is even a quality box as well. I’m going to be adding a set of your steak knives soon.

Great blade, great handle
This is a very nice knife. It’s like the “sport utility” of chef knives. The handle (for me) is amazing, especially with the taper into the pinch grip area. Slightly blade-heavy balance, which I prefer. Arrived very sharp already.Haven’t had it long enough to get a feel for edge retention yet or how easy it is to hone/sharpen when needed. If I remember, I’ll come back in 6 months with an update.

It’s a good chef’s knife. Works fine for veggies, meats, etc. Even stubborn homemade pizza!

Sharp blade but too light and difficult to handle when wet or greasy
My wife and I both used this âchef and cleaverâ knife to cut raw steak, cooked rotisserie chicken, an 8 lb watermelon, and some tomatoes & onions. Itâs a very sharp knife. However, the weight of the knife and the handle shape/size did not fit the bill for us.Usually, a heavier knife can generate force and momentum when cutting. The lack of force and momentum was experienced when cutting through the chicken. It also lacked a sense of balance. We expected a âchef and cleaverâ knife to have more weight. It may be that our expectations of weight were too high.In addition, the handle shape & size and some moisture/oil on the handle surface made the knife difficult to hold while cutting thick foods (like thick raw steak and a fatty rotisserie chicken). The handle is textured, and the blade is sharp, but it didnât meet our expectations for a âchef and cleaverâ knife. Others may like it. However, it is not a knife we would buy for the cutting we did.

They’re Actually Very Sharp
Quite often these days when we order cutlery, particularly mass produced, what receive is a knife with a machine edge on it. This means that it was sharpened in whatever manufacturing process was done, but a final edge has not been put on them. So I was surprised to find that these ones had at least some extra attention paid to the blade as they are quite sharp.Overall quality is very nice. The design in the blade has the appearance of Damascus steel and many Damascus steel knives are made from this same material. The blade is very sturdy, hard to tell if it is actually a full tang but considering the design it’s probably half.I took one star off for two reasons. One – while the handles do appear to be some sort of wood, it’s actually very hard to tell as they have been polished so smooth you can’t feel it and it’s hard to see the grain unless looking very closely. The second I took off for the price. These are a bit expensive for what they are and the steel, while being great for kitchen use, is a fairly low cost material in wide use.
