    So easy to sharpen wife’s kitchen knives
    It’s fun to use and very easy also! I own diamond plates for freehand sharpening and a fixed angle sharpener for my pocket knifes. They both require a lot of attention when using them. This sharpener you just roll back & forth across the blade. By far the easiest system I have used. For a really sharp edge a strop comes in handy but that is for every sharpener.

    The System Works
    I’m the one who can’t sharpen knives. I’ve had instruction on using a whetstone and did OK for a while but always fell back to old habits and could never get that sharp edge and maintain it. With the ACBS roller knife sharpener, it only took a few minutes to successfully obtain that sharpness I was looking for. I spent about five minutes per knife and within a half hour I had five sharp kitchen knives. So far so so good.

    Seems to work
    Using this is kind of awkward but it seems to work quite well. I’ve sharpened some knives and they came out nicely. Seemed to make them sharper. I didn’t spend a ton of time on them but they were noticeably sharper.

    Such a sweet tool
    This sharpener is very very cool. It’s HEAVY – so it’s going to be a solid mass to push against while using it to sharpen the edge.Everything works exactly as expected and it’s a quick sharpen on any blade.The toughest part of using this is when I’m sharpening long curved blades, and it’s a little tough to keep the sharpener oriented correctly to the blade, but I think it’s just because I’m not an expert with using the sharpener yet.

    Interesting product, many problems.
    This is an interesting approach to knife sharpening. The magnetic base sets the angle of cut – you place the knife against that base, edge up, and roll the grinding disc along it. There is no mention of using water to lubricate the provided sharpening wheels. I’ve never seen this in any sharpening tool and find it odd. There are four angles (15, 18, 20, and 22) and three grits: 400, 1000, and 3000.I tried this out first on a few knives I don’t care much about. It did sharpen them nicely. Then, I decided to take a chance on some of my higher-end knives. I used it on a Global chef’s knife. The appropriate angle for a knife like this is 10-15 degrees, and I used 3,000 grit. Global knives have very thin blades – this is one of their features. The base is not long enough to support longer knives. As the rolling stone moved along the blade, it would cause the blade to deflect over the areas that were not supported by the base. I could prevent this by supporting it with my finger. This is not going to lead to precision sharpening results.The Global blade’s sharpness using a traditional whetstone is superior to this method. Sharpening a knife with a whetstone takes a bit more time, but I find it worth it.Other than this, there are a few problems with this product. It arrived damaged (see photo). It was purely cosmetic, but for $189, I think you should expect better. The manual doesn’t give enough details about the sharpening. What discs should you use? Which angles are better for different knives? You have to come to the Amazon webpage for that. If you are a beginner at sharpening, this would be crucial info to have on hand.The manual shows that you pull the discs off to replace them. I found that impossible. I had to use a butter knife to pry the discs off. It’s not easy and worrisome for scratches, etc.Of course, the biggest problem with this tool is its price. Good whetstones, with jigs that you can slide over the knives to provide the perfect sharpening angle, can be found on Amazon for less than half the amount of this tool. And, in my experience, they do a better job.

    An innovative, easy-to-use sharpener
    I’m giving this product five stars because it incorporates a really original, ingenious design; it is extremely well made; and because it reminds me of the old photographers’ adage that the best camera in the world is the one you have with you. In that vein, the best sharpener is the one that you’ll actually use.Would it be better if you acquired a series of whetstones with several gradations of grit, from coarse to ultra fine, and then learned how to use them properly? Sure it would. But are you going to do that?This sharpener relieves you of having to acquire those skills. The rolling motion of the sharpening discs gives you a moderate sharpening action (much less aggressive than a motorized sharpener). And the magnetized jig holds your knife at a predetermined angle to match the bevel of your knife’s blade. (If you’re not sure what angle your knife is ground to, you can usually find this information online.)There are limitations. You can only sharpen a blade that’s about as deep as the diameter of the sharpening disc (unless you make your own custom rig to hold something larger like, say, a Chinese cleaver knife, but that would be a real project). And of course you are clamping a knife with its edge facing up, which is inherently risky. And during sharpening, your fingers are coming pretty close to that blade. So you’d better maintain your focus or risk becoming a Monty Python skit.All in all though, I think this product offers a fresh approach to sharpening, one that might get you to do the maintenance on your knives that you know is overdue but that most of us put off way too long.
