Great Knives! Very well made, and very sharp.
I like the wood handles and the fact it is carbon steel, easy to sharpen and holds an edge. Opinel is high quality through and through!

Good inexpensive steak knives
Fantastic little knives. Mine came very sharp. They are carbon steel so they will sharpen pretty easily but you cant expect these to be maintenance free. Acidic foods and age will discolor them, water will rust them. That said, we use these as simple, inexpensive steak knives and they work great for that.

Ok for a cheap knife, but very soft
I dug my old No.6 carbon model out of storage to make sure.Either Opinel is choosing to make these extra soft, or I got a bad set (both of them). These 102 paring knives are not nearly the same hardness as my trusty old number 6 folder. Opinel doesn’t say what the hardness is, but it seems like around 54.I wish I didn’t have to buy 2 of them. They are not likely to be your favorite knife. If you want something like this, consider the cheap wood handle Mercer instead, available in a quantity of one.

Decent, sharp paring knife
At the time of my purchase, these Opinel paring knives are being sold as a box of 2 for $14. As such, I’m judging them in comparison to your standard stainless steel paring knife with a black plastic molded-on handle. Both cost less than $10, and so both could be treated as sort of disposable. However, I expect the Opinel will sharpen up nicely, and will thereby outperform my old (cheap) stainless steel paring knife considerably.Opinel makes this parer using their standard high carbon steel, which I’ve found performs well in their traditional folding knives. I purchased this knife for the steel, and expected a ‘rustic’ level of fit and finish, especially given the price. I got exactly what I expected. It’s not the most comfortable knife I own, but it came sharp and so far it cuts great. Even considering the rough wooden handle, it’s really not bad for the price. If it stays sharp half as well as other Opinels I’ve owned, I’ll be happy. And if the handle bugs me, it can be fixed with sandpaper and elbow grease.One note for those complaining about rust… It’s made of carbon steel. It will definitely discolor with use, and it requires a basic level of care to prevent rusting. Clean it and dry it after use, and occasionally apply mineral oil to the blade and handle if it’s humid out. Don’t leave it soaking in the sink, and don’t run it through the dishwasher. That’s about it… If you can’t be bothered to do those things, then you should probably buy the stainless steel parer with the black plastic molded-on handle instead. 🙂

Ce sont des couteaux de bonne qualité. Le tranchant est efficace. L’affutage est simple et rapide. La durabilité du tranchant après affutage est meilleur qu’avec un acier inoxydable. C’est toujours le cas avec un acier carbone. L’inconvénient est que la lame peut rouiller (des traces légères). pour y remédier je recommande de les effacer avec du papier carrosserie (papier abrasif souvent de couleur grise), d’un grain de 500 par exemple. Sinon, vous pouvez aussi protéger la lame en la trempant dans du vinaigre d’alcool. La couleur de la lame sera alors d’un gris un peu plus foncée. Cette patine protégera la lame de l’oxydation de l’oxygène présent dans l’air, principale cause de la rouille. Un film d’huile alimentaire marche aussi, mais il faut le renouveler après chaque utilisation.

Tot twee maal toe besteld en terug gestuurd omdat ik niet de roestvrij stalen versie kreeg opgestuurd maar de carbon versie. De laatste keer maar zo gelaten. Deze roesten als een malle. Je krijgt van Amazon dus niet de rvs versie ondanks dat je die besteld.
