A knife worth more than the price
This is a knife worth more than the asking price. It has a German stainless blade that has a very sharp edge and point. It appears to be built very well built with full tang handle and 3 rivets. The handle is a durable fibroid plastic that seems resistant to moisture. I hate for the secret to get out, but this is easily a product that could command a price of 30+ dollars. I understand why it was listed as a âAmazons Choice.âProvided that you take proper care of it, it will outlast you.Itâs not every day that you see a product worth a good deal more than the price in these modern times. This is one such product!It feels great in the hand & is easy to use and clean. It slices through the intended materials like a laser.Never wash a knife like this or other fine cutlery in a dishwasher. Only by hand and dry thoroughly by hand. Place thin coat of food grade mineral oil on the blade for storage.Great job Oakesware!

I gifted this to an elderly man that lost his bird beak paring knife.This one has a nice sized handle with some weight to it.I suspect it to have a good steel composition that probably will have a hardness rating around 58. That is about the average for a decent kitchen knife. It should stay sharp because of the hardness and the curved design .The curved design assures that the cutting edge does NOT come into contact with the hard cutting board surface and that is what dulls kitchen knives. Only the tip touches the cutting surface so the knives will stay sharp!I recommend this design for cutting meats and veges by people that don’t want to have to sharpen a knife all the time!!

Nice birdbeak, larger than expected
Looking for a birdbeak paring knife like my grandmother’s, which I loved, and this seemed a good place to start. I have only had this a couple of days, but so far am pretty happy with it, and the price is just right for this lovely knife, and to check out this brand. It is sharp, seems like good steel, although the finishing on the blade leaves a bit to be desired – like they skipped the last two polishing levels, machine marks in the blade etc but given the price, not surprising. The handle is finished superbly, very smooth, satin finish – so they spent the time where it was important. It is forged and full tang. The handle feels very good in the hand, comfortable and weighty. Do know that this is a large, heavy knife, not the tiny bird beak I was expecting. I have medium large hands, and the handle fit is perfect for me, so just an observation for potential buyers. The balance falls on the second and third fingers, back about a third of the way into the handle. I have not yet used this on a major peeling task, like canning peaches, so I don’t know how the heavier weight will effect wrist tiring on extensive use (which was mentioned in another review), or more delicate hands. If you are hesitating because you think this price may indicate junk, wait no longer.
