Excellent knife
Itâs a good quality tool for cutting, it has great sharpness and it handles well. The sharpener isnât very sophisticated like it seems for the case, its just two wheels inside that shapes or grinds the blade every time you slide the handle. But itâs all good.

I have had my knife et for two years, they are as sharp now as when I purchased them, some home one got lost (maybe the dishwasher ate it) and I had to replace one, now I have four, o go ahead dishwasher eat away. Wish I could have just purchased one, but that ok.

The larger Ninja NeverDull knives are beauties. They’re very well designed, well constructed out of excellent materials, they’re solid, sharp, comfortable, and they have a clean, smooth finish. I say “larger knives” because the smaller Ninja NeverDull knives, like the 5″ utility knife and the 3.5″ paring knife, are still very nice, but nowhere near as impressive as the larger ones like the chef’s knife and the santoku.As you probably know, the santoku is a relatively recent invention and it’s basically a cross between a gyuto (the Japanese equivalent of the European chef’s knife) and a nakiri, a low vegetable cleaver. The santoku covers a spectrum. Some are a lot more like a gyuto/chef’s knife while others are much closer to a nakiri in terms of look and function. The Ninja NeverDull santoku is more like a gyoto. The blade curves more than the average santoku and the tip is slightly pointier. For someone who will have only this santoku, it’s a great design decision. It’s made to be a knife to do it all and it could replace the chef’s knife for most uses. But if you also have a chef’s knife, you miss out on the opportunity to have a knife that’s more like a nakiri and this otherwise excellent design may feel a bit redundant.I mentioned the excellent materials. The product description flippantly refers to “stainless steel” or “German stainless steel”. Brag a little, Ninja! This isn’t any stainless steel. Ninja wisely chose to use X50CrMoV15, also known as German 1.4116 steel. This is the same, high quality, versatile steel that’s used to make high end Wüstof knives and those of other reputable, high end knives. It’s a steel that’s reasonably hard, by European standards (around HRC 56), but very resilient and resists chipping, breaking, and rust. However, it is soft enough to scratch, so don’t expect the silky finish to last you a lifetime. The tempering and treatment also affect the quality, but whatever process Ninja used, the steel came out gorgeous and it performs beautifully. The handle is similarly excellent. The material seems to be some very tough polymer, probably glass-reinforced nylon. I found no imperfections in the handles of any of my 5 Ninja knives, and the handles feel like you could drive a truck over them and leave them without a scratch. The fit of the rivets is so smooth that you can barely feel them, and then, it’s only by the slight difference in temperature and texture, not because there’s the slightest gap or offset between the rivets and the handle plates.You’d have to spend about twice as much to get a knife of only slightly better quality. Well done, Ninja!However, I do have one sharp criticism for Ninja. It’s impossible to buy most of the knives individually and some knives can be purchased only in one specific set. It’s a very unfriendly way to market a product and I’m certain that they’ve lost a lot of sales because of this. Not only will people not be able to buy the knife that they want, but they might decide not to buy any at all if they can’t assemble the set that they need. What are they thinking?
