I have a few of the Misen knives and have been very impressed will all of them. This knife is no exception. This knife is superior in cutting fresh crusty bread, and also cuts toasted sandwiches without shredding or breaking up the bread.Although this knife is made of AUS8 steel rather than the AUS10 steel that most of the Misen knives are made of, it is still superior to most bread knives even of more expensive brands. The AUS8 steel is easier to sharpen than the AUS10, but the steel grade should have been mentioned in the Amazon description.UPDATE 7/23/22:As mentioned previously, I am still impressed with this bread knife for cutting fresh bread, rolls, bagels, buns, etc. Tonight, I decided to make garlic toast using French bread I intended to brown one side in our toaster. When I cut the bread lengthwise, one side of the bread was less than 1/4″ too thick to fit in the toaster. I pulled out this bread knife, and proceeded to cut off a thin slice on the soft side of the bread. Honestly, I expected the bread to crumble into a pile of crumbs. To my surprise, the knife cut a thin slice the length of the bread so it would fit in the toaster. Now, how cool is that!!Overall, I am very happy with this knife, and will update this review if my opinion changes. I hope this review was helpful for you.

Just as advertised! Full tang high carbon steel with a very sharp edge. My last bread knife, no name brand broke while cutting bread! No tang, just a hollow plastic handle. This new knife will last for years!

Knife Comparison: 32 Serrations Are a Bad Idea
SUMMARY: The 10â Misen serrated bread knife is expensive, and looks beautiful. I compare it to 10â Mercer (rated best by Americaâs Test Kitchen) and 8â ICEL. These other knives cut crusty bread better and the Mercer is much cheaper.Length SurpriseThe heel portion of all these knife blades is not sharp for safety in case your finger slips (see Micen picture). This of course means that the cutting length is as much as 1â shorter than you might expect. Sharp portion of blade is: Misen: = 9.25 inches; Mercer = 9â and ICEL = 7.6â.Serrations and Cutting Crusty Bread:I was disappointed to discover that Misen was reluctant to cut a hard crust and it was even slow to slice the rest of the bread. [Both Misen and Mercer were razor sharp out of the box, and although my ICEL knife is many years old, I honed it razor sharp.] Both ICEL and Mercer were faster. WHY? Since all were razor sharp, it has to be the serrations! Misen advertises it has 32 serrations while the other 2 knives had fewer, but larger serrations (see picture). I agree with Americaâs Test Kitchen who said, âThe best knives had broad, deep, pointed serrations and, most interestingly, fewer of them.âHandlesA knife is not merely the blade, it must have a good handle! Mercer had a very grippy rubber/plastic handle with a knobby surface fused to blade (picture). It wonât win any beauty contests, but it is by far the best handle in this group. It made using the Mercer knife effortless. It is easy to see why Americaâs Test Kitchen liked this knife. Both Misen and ICEL had smallish plastic handles that quickly got slippery if my hands were wet or greasy.Misen Grip??Misen claims, âA distinctive sloped bolster shape encourages a proper and safer “pinch gripâ for better comfort and controlâ (see pictures). However, in most cases you will want to place your thumb on the top of the handle for better leverage. Mercer makes this easy (picture).Steel Quality/DurabilityMercer (made in Taiwan) uses X30Cr13 steel (see Wikipedia: List of Blade Materials), and it is also the least expensive knife here – cheap enough to throw away when it wears out. Unfortunately, neither Misen nor ICEL specify the grade or hardness of their steel which makes durability comparisons impossible. ICEL is made in Portugal while Misen is made in China from Japanese steel.National Sanitary FoundationOnly Mercer has a âNSFâ rating which is sometimes required by the health code for restaurants.NOTE: About Those Holes!Holes? Yes holes. You may have noticed that my pictures of Mercer and ICEL have holes at the tip of each blade to hang them over the work area. This is very handy! Unfortunately, they do NOT come that way. Only the Japanese MAC knives seem to provide holes. SO I DRILLED THEM. You can too. Well, if you want holes, it is not easy because it is knife steel. Steel bits don’t work. You will need a drill press and a set of cheap carbide drill bits for ceramic (or glass) that Amazon sells. Start with the very smallest bit and work up to the size hole you desire. Plan to go slow and destroy a bit or two.
