A high quality sharp knife at a reasonable price.
I have quite a few more expensive knife brands such as Wustoff, Shun, etc. and have been finding that some of the less expensive brands are every bit as good and sometimes better. So often the cost of a knife is determined by name rather than quality.I recently decided I needed a new paring knife, and decided to try this Misen knife since I have read some good reviews about this brand. I bought it in blue so I could easily identify it from my other knives. Since I have so many knives, I have learned what to look for in a quality knife. The angle of the blade and the materials used are all important considerations in choosing a knife that will hold the sharpness for a reasonable time (all knives need sharpening eventually). In addition the tang and the weight help in the comfort in using the knife.So, what do I like about this knife?1) As small as this knife is it has some weight to it that makes it more comfortable to hold.2) The tang of the knife is curved which make it easier to hold.3) This knife was super sharp out of the box.4) The blade on this knife has the Asian 15 degree angle which is much sharper than the Euro blades of 20 degrees. This angle can be more delicate and dulls more quickly than the wider Euro blade, but I prefer the sharper blade.5) The blade is made of AUS-10 steel which keeps the blade sharper longer. AUS10 steel is a high-carbon stainless steel known for its toughness, good level of hardness, and easy sharpening. Itâs deemed as the strongest among the AUS series steel grades.6) You won’t beat the price for this quality.As for so many products, keeping up with current technology can be difficult. This is also true of knives and the metal compositions currently used to maintain sharpness and the quality of the blade. In my experience, the 15 degree angle of the the blade and the AUS-10 steel provides qualities rivaling the more expensive knives in addition to other qualities mentioned previously. Although one reviewer described the Japanese knives to be brittle, I have a number of high end Japanese knives and haven’t found this to be the case.I have used this knife to cut a few different vegetables, but the tomatoes are the most impressive. This knife can cut thin slices on even ripe tomatoes without squashing them. This also my go-to knife for coring tomatoes.At this point, I am impressed and entirely happy with this knife and plan to buy more knives of this brand. I hope this review was helpful for you and I will update this review if my opinion changes.

Nice knife! Sturdy and sharp, nicely balanced
Really like this knife for the heavier paring jobs. Its got a very sturdy blade and has stayed sharp quite a while – have not needed to sharpen it yet.t It’s very well made, handle is very well fitted – expect it will provide good service for many years. The balance is also nice as is the handle shape.

Just as Described
I ordered this knife in green for my fiance’s birthday. It’s just as described. Good, sturdy handle, sharp blade, we have used it twice since he opened it and it’s pretty awesome. I can tell from our experiences with other knives, this one will rust, so recommend always hand wash and immediately dry. I wouldn’t put it in the dishwasher.

Decent quality, but not as stainless as I was hoping for..
If anybody is into pocket knives as a hobby, you would know VG-10 is a decent steel. For that reason, I was happy to find a paring knife with a known steel and a known (but new) brand at a reasonable price. For even better steel, you would have to spend around $100 for a paring knife (which wasn’t worth it to me). So I was disappointed when the tip developed a little discoloration after air drying. Granted, the instructions do say that you should wipe off any moisture after use. The edge was very sharp out of the box. Unfortunately, the edge got somewhat duller only after a few days of mild use (eg. cutting apples & oranges). The knife is still sharp, just not as much as before. The paring knife is heavy for its size. I guess that is due to the full tang construction. Personally, I would have preferred a lighter knife. I would have given 3.5 stars but I guess my disappointment is not with the build quality, which is quite good. Rather, I was expecting too much stain resistance and too much edge retention from their chosen steel.

Finally a WONDERFUL knife!!!!
I received this knife today and LOVE it. It was super sharp coming out of the box. I did not need to try and sharpen it to get a decent edge on it. It came that way!!! Love the way it fits my hand! I was searching for a really great knife to replace my 40 yr old Hoffritz paring knife. I loved those knives and still have the rest of the set in good shape…..Yes surprising they are about 40 years old and used everyday. But this new Misen 3.5 in paring knife appears to give me many more years of use. I cook daily and generally use the paring knife every day. Crossing my fingers this will be as fantastic as I am use to. So far so good. I am happy my search is over for the perfect knife that fits my hand and is comfortable to use.

Misen muy buena marca, tengo sartenes y cuchillos de chef. Considero que tienen muy alta calidad para el precio. Son utensilios que duran y duran, claro con mantenimiento adecuado. Este cuchillo es súper ligero y el filo es muy alto, asà que tengan cuidado al usarlo pero eso mismo lo hace muy cómodo de usar, no necesitas aplicar gran fuerza para obtener cortes limpios y precisos.

Time will tell if it remains sharp as was stated. I only use it on soft items e.g. vegetables, meat, fish and wash and dry by hand so it should.
