great grilling
So far I have used it to grill peppers and it does a great job. I have found that the surface gets altered after one use. I was afraid to use steel wool on it, so it just isn’t as smooth as when it is new. But it gets the job done.

Flimsy, over-priced grill pan.
My boyfriend and I are fans of Milk Street and always enjoy learning from Christopher Kimball about various recipes from all around the world. My boyfriend invested in a Bull grill this past year and enjoys grilling anything I ask him to. When I saw this Milk Street Közmatik Grilling Pan, I liked the versatility of fire-roasting on a gas stove, as well as an outdoor grill. My boyfriend’s mother has a gas stove on which I cook when we stay with and visit her for a month. In the meantime, I sliced some yellow onions and asked my boyfriend to try this Közmatik on his Bull. Both he and I like the idea of “open-flame cooking without the mess of charcoal.” Plus, you donât need any oil, so thereâs less calories.This enamel-coated pan is 12″ in diameter, including the slanted sides, but the actual cooking plate with the sharp grates measures 9″. It’s about 1 1/4″ deep. It only weighs 11.1oz. (316g.), not 16oz. as stated on the product page. No instructions accompanied this pan, so I researched on the Milk Street website and Facebook for videos and reviews saying you only need a medium to medium-high heat, as it heats up pretty quickly.We already ate our package of bell peppers in salads the past week. The only other possible vegetable to fire-roast was yellow onions. We usually sauté’ them in some butter but wanted to see how well they charred in this pan since we knew we shouldn’t use any oil. Reviews on Milk Steet said oil affects the enamel coating. In hindsight, I probably shouldn’t have sliced the onions because my boyfriend had a difficult time turning them over. I should have sliced 2 small or medium onions in half. Whole bell peppers would have been easier to fire-roast, too, which we have done on our grill for Baba Ghanoush.My boyfriend prefers onions sautéed in butter, instead of cooking them in this Közmatik. I didn’t mind the taste for something different.This pan is supposed to be dishwasher safe, but I easily handwashed it, taking care as I wiped over the sharp grates. After I rinsed it off, I could see how the enamel coating was affected by the flames. The flimsy pan is also now a bit warped since it’s not a heavy-duty cast iron.I’m anxious to try using it on a gas stove, to allow a roasted flavor without the added calories of oil or butter. Perhaps, another reviewer can provide that feedback. For our first time use on an outdoor grill, it’s very similar to other grilling pans that have holes. It’s lightweight, flimsy, and over-priced for what it is.

Simple and lightweight indoor grill pan
I really like the versatility and ease of use of the Milk Street Közmatik grilling pan. It lets me roast veggies on my gas stove without the need to fire up my grill. It’s absolutely perfect for when i need to roast some chiles for a sauce, salsa or for fajitas. The pan is lightweight and maybe a bit flimsy, but it worked excellently. The enamel coating showed some wear from the flames, but cleaning was easy. Although you should be aware of the sharp edges when cleaning. Id highly recommend using a brush if your pan really needs a good scrub so you dont cut your fingers.

If you like roasted or grilled vegetables, this is a must.
This grilling pan doesn’t look like much when you first open it. It’s very lightweight and thin. But I have a gas stove (I am sure it works best on gas stoves) and once I fired it up, this pan turned out to do a great job of leaving a char on roasted vegetables. It’s a lot faster than preparing a grill and great for fajitas, grilled hot dogs, and other foods in addition to vegetables. But it’s mostly the grilled vegetables I was interested in. I don’t eat enough and I’m trying to eat healthier, and this makes that task taste a whole lot better. I took off one star because I think it’s a bit overpriced. But it sure is handy to have. I would not put it in the dishwasher nor would I scour it heavily. If you don’t wipe it off immediately (which I would recommend), I would say it’s best to soak it and to avoid scrubbing it.

Works, but, realistically how much will you use this
First of all, at time of review, I must note this item is a pretty poor value, I don’t know if its traditional, but I don’t love how sharp the grates are, as you have to take care when cleaning it and I am sure it will wear out my sponges faster. And because of that, it is not particularly easy to clean. Yes, it has a strong ability to put a “grill” like char on your vegetables and it heats up quickly since it is so thin. The size is appropriate but as I had noted, there are some design pitfalls to this, even including the fact that there isn’t a handle or something to make handling this easier.

Itâs nothing but a 12â âplate.â Except it has wickedly clever âgillsâ throughout it. And a ridge to keep juices from leaking out onto your gas burner.The Kosmatik needs no instructions because itâs absurdly simple. And completely intuitive. You set it on your gas burner, you put your onions, pepper, squashes, eggplants, whatever you want to grill, and set your burner to medium. The Kosmatik âgrillsâ your vegetables slowly, simply. You turn them over with tongs, and remove them when theyâre charred to your liking.Itâs big enough to âgrillâ vegetables for a small family. But heck, itâs cheap! It you have a large family, get two. I couldnât believe myself today when I bought vegetables just so I could grill them on my Turkish Kosmatik. Itâs awesome.

Works best with a gas stove
I ordered this grilling pan to use on our outdoor gas grill and sadly, it didn’t work quite as well as I hoped. The pan is quite lightweight and designed to fit on a gas burner with the flame practically coming into contact with the vegetables. On a grill, the flame is much further away and this style of grill pan just doesn’t work as efficiently as a roasting basket.
