    Proper Chef’s Knife for use in commercial setting.
    I am partial to the steel on Mercer’s knives. Having had many that are still with me in my 15+ years of professional cooking. They take an edge well, are abuse ready and can tolerate reprofiling with decent results. (for the serious knife people out there). The G-10 is great in hand and under wet conditions provides stable grip. The blade is perfect, it looks like a queen, but is a work-horse so don’t be afraid to use it. For the price, the flash and the authority alone make it worth while to purchase for the serious chef/sous chef/ etc. if ya don’t know how to maintain a blade, probably not for you.

    Extremely sharp and beautiful
    Cuts through vegetables ridiculously easily. Just a joy to use. Extremely beautiful to look at. My Wusthof knives cannot compete with this Mercer. I would have happily paid twice the price for such a high quality knife.

    Don’t skip over this.
    I’ve used a lot of different brands in commercial kitchens. Mercer is something I keep going back to and this knife was my recent reason why. I use it as my daily driver. I rarely reach for the other knifes in my roll, because of how versatile the blade is. Even when I’m considering needing the strength of my nikiri or butchers.

    It stains at 1st wash
    Well.. its supposed to be a high quality knife, yet it’s got stains with the first wash. Plus the letters start to come off with just 1 use. Its not great definitely.

    Decent for the price
    Since we started cooking more at home, I’ve been looking at Asian-style knives. Most of the Japanese (as in made-in-Japan) knives are quite costly. Mercer has a great reputation, and I thought to give this a try. Unlike other reviewers of this knife, I did not receive it for free. I paid $70 here on Amazon for it.TLDR:It’s a nice knife for the money.A more detailed review:This thing took forever to arrive. Something like 3 weeks. It did arrive right in time to prep dinner a couple weeks ago, however. Out of the box, it was quite sharp, and made quick work of the carrots, onions, peppers, garlic and chicken that I had to prepare. The handle’s wood grain looks very fake up close, but other than that, it’s a very nice looking knife.Since I mentioned the box box, this knife came in a semi-fancy black box with a magnetic seal, red “velvet” foam and a generic-looking microfiber cloth that said “kitchen knife” on it. On the box was a sticker that read “Made in China.” Most of Mercer’s knives, to my knowledge were made in Taiwan. This started to seem more like one of those OEM knives that are flying out of China under different brand names (Dalstrong, Tuo, Xinzhuo, etc.) In fact, you can find a knife by Haro here on Amazon that looks identical to this Mercer knife, but for a bit more money. I reached out to Mercer to inquire about where this was made, and to verify that it was really constructed from VG10 steel, as Japan stopped shipping that steel to China a few years ago. I received a quick response from Mercer verifying that it was indeed their knife and made from VG10 steel (while you can’t buy the raw steel, I guess knife blanks are available.)Back to the knife’s performance – since I received this knife, I’ve broken down chickens, processed beef, sliced tomatoes, sliced, diced and chopped all sorts of veggies and fruits. I haven’t needed to break out my whetstones yet, but I have used a ceramic hone a number of times. It’s still plenty sharp.Ultimately, I like the knife, and it will probably be my primary knife for the foreseeable future (I have this and a Henkel’s International Forged Synergy chef knife.) My primary qualms with this knife are the aesthetics of the handle and me being convinced that it’s an OEM from China. While $70 is a great price here on Amazon, you can find a comparable knife for $40 or so on AliExpress.

    I have a couple Kiritsuke worth about twice as much, but this thing is on par for quality of build.It really does feel and look like a much more expensive knife.I won’t know about edge retention for a month or so, but will update.I couldn’t be happier with this purchase.

    ok empezando este cuchillo viene en una caja igual a los de MX3 de la marca Mercer, esto es, dentro de un estuche muy elegante y con un trapito para limpiarlo, de entrada tiene bastante buen filo y es mas facil de limpiar que los otros cuchillos mercer de la serie rennaissance que tengo, tal vez la aleacion de metal tenga algo que ver.Lo utilizo como cuchillo general en la cocina, como aparece en la foto tengo varios, lo utilizo para cortar fruta para postres, cortar chocolate macizo en barra para reposteria, para cortar mandarinas para jugo, como cortador de pizza cuando sale del horno, para cortar vegetales, pasteles, nopales, cebollas, costillas de cerdo, jamon en cubitos, inclusive corto papel encerado para hornear pasteles con el cuchillo en vez de usar tijeras, asimismo, a mi me encanta la reposteria y todas las recetas, desde panquecitos hasta pasteles y tartas piden mantequilla, la cual la compro en bloques de 1 kg. y tengo que cortar un gramaje especifico lo cual hago con este cuchillo, ya que puede cortar el bloque a la mitad si asi lo deseo sin mucha dificultad y sin perder filo, en fin todo lo que se pueda cortar ese cuchillo lo corta, es un poco mas ligero que el cuchillo de chef mercer de la marca reinnassance y otra cosa curiosa este cuchillo no se ha rayado, y lo uso en la cocina del diario, cuando otros cuchillos si presentan ralladuras por el mismo uso pesado en la cocina; ademas el mango se me hace comodo y tiene un bonus de una estrellita en el mango, la cual me agrada visualmente.Buen cuchillo, que de acuerdo a mi opinion, es mas probable que me muera y que el cuchillo siga como reliquia familiar,

    Creo que es importante mencionar en la descripcion del producto que no es acero de damasco real, tiene un muy buen filo pero lo pierde muy rapido
