    Designed for a commercial environment where performance is important.
    Probably the best bread knife at this price point. The NSF certification means that it is certified for use in a commercial kitchen and is basically a reliable workhorse designed to be used many many times daily on a busy buffet line. I used the Victorinox Fibrox knives when I worked in restaurant kitchens and the cheaper Mercer knives seem to be about the same quality and price. For my home kitchen I wanted something a bit nicer with an integral bolster and rivets. But I use my knives and not simply to fill out a knife block. Some pricier knives are prettier and are made from exotic steels. None of that really matters if you are cutting bread and cakes. The serrated blade design is the most important thing. Ergonomics are entirely personal but I take a medium sized glove for food handling and have no problem gripping the handle.I wonder about durability but that will probably take at least five years to figure out. Nothing about the blade grinding nor the fit and finish makes me worried about build quality issues. The knife appears to be a much nicer version of the knives we used everyday at the restaurant. The first test was a open crumb calabrese boule and it almost cut too quickly. The next test was on a typical supermarket “Italian” bread with a very tight crumb and it sliced as if there was nothing there. My next test will be on a typical submarine sandwich on fresh chiabatta to test for tomato slices getting pushed out while the sandwich is cut in half. I have not done a cake splitting test but I don’t bake cakes often.I would definitely recommend this knife for someone that is budget minded but still wants a decent functional knife. I do sharpen my own knives and can sharpen a serrated blade (though it is a bit of a pain). It is a common brand for culinary students as a first knife set. So it is affordable and will get the job done. The only chefs/cooks that bring their own knives are sushi chefs, possibly fine dining chefs, or a chef’s home kitchen. If you eat in a restaurant, your food was most likely prepared with a fairly inexpensive knife sharpened by a professional knife sharpening service.

    Looks great, feels great, works great, and great value
    I have the cheaper version of bread knife that won ATK’s best bread knife review. I use that one at my second home, and in my primary I got this one. Works just as well, a little slimmer, much better looking, and feeling. Works the same, which is, perfectly as a bread knife. Highly recommend.

    Great value
    I’ve only used this knife for a couple days but wow, the quality is pretty great! The build quality is very nice and it cuts bread and tomatoes like butter! I will have to see how well this knife holds up over time but so far I have 0 complaints!

    Nice bread knife
    This knife is a pretty good buy. The quality and materials are very good, comfort is good, and it’s very sharp. The only thing I don’t like about it is that the blade is a little too flexible for my liking. When cutting thick and hard breads it bends a little and I would have preferred it to be more sturdy. Still good though.

    Amazing quality piece!
    Wonderful bread knife. So extremely sharp, comfortable to hold, and solid! You can’t go wrong with full forged, it just feels so nice to hold and then when you slice something it just makes you want more things to slice!

    Good workmanship, flawed design.
    I love my mercer knives, but this one didn’t live up to expectations. If you cut robust bread like home made sourdough, it lacks the grip to bite into the top bread crust effectively and it also struggles to finish cutting through the bottom crust as well.If you cut softer breads, it should work fine. Other than that, it’s extremely well made with high quality steel, a comfortable grip and a pleasing appearance. Good workmanship, flawed design.

    Perfect bread loaf slicer
    Been baking a LOT of bread this past year. Finally decided to get a good knife for slicing. This knife is excellent. Cuts through the loaves easily and with no tearing.

    Wow is this sharp, I’ve ordered new knives that were pretty good, but this slices through frozen buns with very little effort, and makes short work of fresh buns, and your fingers if you’re not careful.

    This Mercer knife is very good quality, very similar in feel to my Wusthof Classic knives, and cuts bread beautifully. It will also cut fingers well if you have forgotten how sharp bread knives can be! Its forged construction and full tang make it feel very substantial, and it is very easy to cut immaculate thin slices of bread with very few crumbs. Would recommend it to anybody who wants a great bread knife.
