8″ Chef’s knife- I like the tall blade and the fact that my knuckles don’t hit the cutting board
Update: We’ve had the 8″ Chef’s knife for just over two years. It’s still my favorite knife, by far. I use it to clean and cut peppers, peel carrots, slice raw meat- almost everything. Okay- I use a serrated knife to cut bread. The staining problem has almost completely resolved by itself (I wish I understood why). I use a steel before about every 3rd use. I just check it first. I don’t like a cast heel because after some years of use and resharpening the heel will wind up below the edge of the blade (as the blade gets slightly narrower from spine-to-edge) and it won’t cut all the way through because the blade won’t contact the cutting board. I bought another one for a friend.
UPDATE: This blade stains easily. I have some knives I’ve owned for 20-30 years and they aren’t stained. This one is stained after about four months (the pics show that, and I know they look like food particles, but they’re stains). It’s still sharp and still my go-to knife.
Wow- inexpensive knife- it’s sharp, and holds an edge. This is a lightweight knife. I like the tall blade and the fact that my knuckles aren’t on the cutting board when I chop all the way down, as they are with shorter blades. We own a nice forged Henckel knife. It’s fine, but it doesn’t hold an edge like this Mercer knife and cost at least 4 times more. I will continue to use that knife for trimming meat, because the tall blade on this isn’t going to maneuver as well.
I cut a few items with it the day I got it, and it’s razor sharp (probably the sharpest kitchen knife I have had). Yet, it seems to have a western edge angle (about 20 degrees), so it should hold the edge well. Seems to be fairly hard steel, to hold that edge, but not too hard, so it shouldn’t chip.
One key to maintaining sharpness is to wash and immediately dry it after each use. That prevents fine rust from forming on the blade edge. Another is to avoid scraping it sideways on the cutting board to collect chopped, or diced stuff. Turn it upside-down (blade facing up) to do that. It’s broad enough to lay it on its side and scoop stuff, like a santoku knife.

Great knives for the price
These knives are perfect for the home cook that just needs a functional sharp knife that they donât need to put a lot of care into. They came out of the box razor sharp (as any good knife should) and they handle well.
I used to use a carbon steel blade, but due to how hectic my life became I had to step back from that as I just donât have the desire anymore to clean and oil my blade immediately after using it. I love that knife. But I also think these knives are going to be a great replacement that better matches my current busy schedule.

Excelente para lo que pagué. Obviamente hay mejores cuchillos pero creo que es la mejor relación precio-calidad. Los únicos dos negativos que le veo es que el filo si se va relativamente rápido y no es particularmente atractivo el diseño. Lo del filo era de esperarse, es una mezcla de metales bastante blando, y lo he resuelto excelente enderezando el filo con una chaira cada una o dos semanas y el filo regresa bastante bien.
Excelente para un cuchillo de batalla y/o opción económica pero de buena calidad.
Ojo, varÃa muchisimo de precio y luego está demasiado caro para lo que es, esperen a comprarlo cuando esté abajo de $400

We wanted to add a chef knife to the Mercer serrated knife we bought for our cousin, and what can be better from the same serie. Well ok there are arguably better serie for a chef knife from Mercer, but we trust Mercer enough for this to perform very well too. Plus it helps to complete the look if both knives are from the same serie.
