    Best kept secret, better than the well known, more expensive brands
    I’d never heard of this brand, but based on the number of rave reviews, particularly those from professional chefs and restaurant staff, I decided it was worth trying, especially since I wasn’t risking that much at this price. I am thrilled I did. I’ve spent far more on knives by top makers that were very good, but not as good this one at 1/4 (or less) of the price. It’s mind boggling to me that this brand isn’t better known. The handle is comfortable, ergonomic, fits the natural curves of the hand, the design facilitates knife work. I was concerned the knife might be heavy because of the size of the handle, but it’s lightweight and well balanced. The blade is extremely sharp, but although I’m accident prone and don’t have the best knife skills, I haven’t had any of the mishaps I have with other similarly sharp knives. I’ve been telling everyone who’ll listen what a pleasure it is to use this Mercer knife, how it makes food prep not only a breeze, but a joy. I truly couldn’t be happier, not a single complaint. My search is over. I intend to make Mercer my brand, will order their other knives and will give this knife and others as gifts to friends and loved ones, assuming the other knives I plan to get measure up to this one. With Mercer’s prices I can afford to share my wonderful discovery, and everyone should have a few really good knives. I’ve learned what a world of difference it can make, and in my opinion, Mercer is the very best of the best, but without the price tag you’d expect for this kind of quality. I cannot recommend this knife highly enough, and am grateful for Amazon and the reviewers, because I might never have known about Mercer knives otherwise. I would strongly urge purchasing a blade cover to keep the blade sharp, especially if you keep your knives in a drawer.     An Inexpensive, Yet Very Effective Kitchen Essential
    I’ve been upgrading and replacing some kitchen cutlery recently and came across this paring knife. For about the price of a venti quad shot, non-fat, no whip mocha, I secured my first Mercer knife. I’ve read that Mercer is a well-respected brand in the culinary and cutlery communities and thought I’d give this a try.
    The blade arrived very sharp and seems like it is well made, as the steel is of good quality and should remain rust resistant. The biggest advantage of this knife over what I had been using (an older Cuisinart paring knife) is the handle. At first glance, I thought the handle was a bit large in comparison to what I’ve seen and what I am used to, but after picking it up and holding the knife, I am a fan. The handle on this knife is very grippy and allows for different finger placements depending on what you are chopping, slicing, or peeling. I feel that I have more control and increased precision when using this knife and for that, I am both thankful and happy.
    I recommend this paring knife to anyone looking for a good deal on a well recognized brand. While I am still experimenting with brands for a full set and determining which type of steel I am most fond of before committing to anything, I will certainly hold Mercer in high regard and check out its full knife sets in the future.

    Can’t Beat It For The Price
    Full flat grind, good budget steel (probably Aus-8 or equivalent) sharp from the box, comfortable ergonomic handle, good slicer, made in Taiwan. Taiwanese craftsman have a reputation for making very good cutlery. What’s not to like? I find myself using this Mercer paring knife for cutting smaller items that I was previously using my expensive Japanese Shun chefs knife for. I am picky about knives and I have no problem with this one especially at this pice.

    Another quality Mercer Culinary knife
    Mercer Culinary – Milleninia paring knife – model number M22003. The blade length is 3-1/2 inches. The total length of the knife is 7-3/4 inches. These knives are 100% manufactured in Taiwan.

    This is my second Mercer knife purchase in Amazon and I can say these are all very reliable knives with very sharp blades.
    .
    Very important, as with any fine steel knife blade, they should not be washed in the dish washer. They should be washed separately by hand, rinsed and towel dried.
    .
    To prevent galvanic action (the transfer of electrons from one metal to another, which may cause pitting on the blades) avoid long periods of soaking in aluminum pans or a stainless-steel sink, remove cutlery from condiments (such as mayonnaise) stored in aluminum or stainless-steel pans.
    .
    These knives fit in the hand snugly and the handles allow for a very comfortable grip when cutting.

    I have not had to sharpen any of my mercer knives, but then again, I do not use them on anything but food items – that includes no chopping or cutting on bones, newspapers, cardboard boxes, etc.

    This size knife is excellent for most of your kitchen food preparation paring needs.

    Very sharp!
    I bought this knife as a replacement for our other paring knife (that was not cheap) that somehow disappeared. I’m guessing it probably got thrown away on accident so we needed a new one. I was very skeptical that even though it had very good reviews (I did fakespot it and they were all legit!) this would be a sharp knife just because of the cheap price but I was not disappointed. The handle is a little bulky in my opinion but I can look past that since this knife is so sharp and it was cheap. When I say it was sharp, I mean SHARP. You need to be very carefully when using it since it cuts through things so easily. It’s really easy to clean, just put it in the dishwasher and it fits in your hand nicely. The handle is rubber so I believe that’s why it’s so easy to hold. So should you buy it? I would if I were you! With such a low price tag, it’s worth trying.

    Arrived nice and sharp, in a secure packet. Was able to peel an apple easily with a very thin peel. Cut through the stalk without much extra pressure, no concerns about a jump. One for larger hands in my estimation, and balanced well to the back. The handle will be keeping the fingers in the holding hand well clear of the blade.
