Looks good, performs well, solid construction
I received a similar knife as a gift and it became my favorite special knife, only brought out when I was doing something ambitious in the kitchen or had guests. I had a go to knife that had less robust construction for my daily go to. It was nothing special and unsurprisingly one day its handle became loose. It wasn’t worth getting repaired so I resolved to replace it, but with a better knife and why not pick one that is similar to my special knife? I bought this as a gift to myself to use as my daily go to on the cutting board I usually have out. Every time I pick it up, I appreciate the look, but how does it perform? It came razor sharp, and it has sliced dozens of seeds along with the meats and veg you’d expect. Not a single knick visible to the eye. Lower quality knives would have needed at least a steel or more likely a whetstone by now. I have three types of knives, the practically disposable, the nice, and the ones that bring joy. This brings joy and I typically hold it at least a few times daily.A knife alone cannot change a bad day into a good one, but it can help. On a good day, when I am cooking for pleasure, this knife is a highlight rather than a mundane tool.Can you buy a more well constructed knife for the price? Maybe. Can you find one more decorative? Of course. This knife hits the sweet spot in price, function, and beauty for me.

Well, I love the blades on these knives. And the first 2 I bought were amazing. Great balance, great handles, great feel…and crazy sharp.BUUUTTTTTT…..I made a brisket yesterday and used the bull nose butchers knife for the first time on said brisket. BTW, the brisket was absolutely BOMB! it was so tender, juicy, and flavorful. OM GAWD!!!But I noticed after washing the blade it has a freakin CHIP in the edge. WT FUDGE? IT’S BRAND NEW! Used once on a tender, juicey and perfect brisket.Y’all know brisket doesn’t have any bones in it. And my cutting board isn’t made of rock or steel… so how the heck did this bad boy end up looking like a used razor knife blade?I seriously expect more from a $100 blade.I guess I should have stuck with the Cutco knives I have used for years.
