    Terrific product
I only added this Boning Knife to my kitchen arsenal during the past 3 days, and it has quickly become an indispensable tool in my culinary endeavors. The blade, crafted from high-quality stainless steel, maintains its sharpness exceptionally well. Whether I’m working with poultry, fish, or meat, the knife effortlessly glides through with surgical precision. The narrow, pointed tip allows for intricate cuts and delicate maneuvers, making deboning and filleting tasks a breeze. What truly sets this boning knife apart is its ergonomic design. The handle provides a comfortable grip, allowing for extended use without causing fatigue. The balance is impeccable, giving me complete control over the knife’s movements.I appreciate the attention to detail in the design, such as the finger guard that ensures safety during use. The knife’s build quality speaks volumes about its durability, and I’m confident it will remain a reliable companion in my kitchen for years to come.

Nice and thin, sharp – wood handle is very nice
Haven’t tried sharpening it yet – but it seems to stay sharp for quite a while, and the thickness of the blade makes it great for veggies. I love the wooden handle, and it’s very comfortable to hold.

Best I’ve found in its price range!
At this price point it comes close to 5 stars. None of that fake Damascus etching or silly hammer dent fake forge finish. Scalpel sharp and nice heft and balance. Really shines on tough skinned vegetables! The bolster was a little sharp, an easy fix with some fine sandpaper. I would purchase again. It is now my go to for 90% of my meal preparation. Excellent edge retention, if you use as intended, but you need to know traditional sharpening protocols to maintain a Nakiri; otherwise stick with a Euro-style Chef’s knife or Chinese cleaver.

    Best blade in the kitchen
I really like the blade. It is thinner than most. Which makes it perfect for slicing very thin slices. Be careful not to try cutting through bone. It is a wonderful slicing knife. But not for bone. Bone will probably ruin your edge. The handle is very well made and comfortable to use. You will thank yourself for buying one.

Overall sharpness is quite good and grip gives you confidence to maneuver through whatever you are cutting. Only the balance could have been a bit better.

Review for normal people:It’s really front-heavy and heavy in general. It’s decently hard and will keep an edge but the downside is if you do not know how to sharpen a knife you could be in a bit of trouble. By “know how to sharpen a knife” I mean if you use one of those “pull through” sharpeners, this is just not going to be the knife for you because those will not be enough to sharpen this knife. It is also very front-heavy and cutting with it gets tiring after a while, it feels like you are wielding an axe. The blade is also very thick meaning it’s not exactly great for delicate work either.Despite all these flaws, the construction is great and all I can say is, it’s not for me personally.Review for KNIFE ENTHUSIASTS:Don’t get this knife. The 440c was not treated well at all. Compared to my Shun AUS-10, the edge microchipped a lot when I sharpened it with a diamond sharpener, however, when I used a Silicon Carbide stone, it hardly cut away at all. That’s a sign that it’s indeed a hard metal, likely to be up to 60hrc, however, it just was not heat treated well.Their ad stated that the edge was 14-15 degrees however that was not the case. I found the edge to be sharpened at 25 degrees out of the box and reprofiling it took literally 2 weeks of grinding and I even had to go out of my way to buy a 50 grit diamond stone to even be able to make progress, this is a very hard metal (which is a good thing) but it’s something you should be aware of: That if you get this expecting a Japanese 14-degree razer sharp edge, you are not getting that. The construction is also a bit rough around the edges where you can see where the CNC machines have been cutting it, which I guess brings me to my next point, it doesn’t look forged, it looks like it was stamped.TL:DRConstruction/Quality: 8/10Edge retention: 9/10 (not bad for home use)Comfort: 3/10Easy of sharpening: 1/10 (going to be impossible for most people)
