This is the best knife Iâve ever used and the quality is definitely worth the money. When I received the package, I was shocked to see how professionally it was packaged and how beautifully it looked. I could immediately tell that the knife was crafted with a very high standard. The blade is stainless steel and razor sharp. It gives me a smooth and precise cutting on pretty much everything I tried to cut.The handle is made from ruby wood and I love the cute turquoise color ring, which makes it aesthetically luxurious. It provides me with the maximum comfort and control, making cutting feel like an ease.Iâd give this as a gift to anyone and I know they will be so happy to receive such a great piece of art.

Perfect for fruit/veggie prep!
I bought this as a gift for my mom and she loves it! She enjoys the design on the blade, and mainly preps vegetables and fruit with it. It cuts so easily through them, and cleanly too! Highly recommended 😀

As described but with minor divot in blade upon arrival
I would never be this picky about a small degecr like this, however, with the credentials this manufacturer claims in its production leads me to feel a bit disappointed in such a clear flaw in the blade edge right out of the box

I recently added this Kawahiro Kiritsuke Chef Knife to my collection, and itâs a fantastic complement to my Santoku knife. While the Santoku is my go-to for general kitchen tasks like chopping vegetables and slicing meat, the Kiritsuke feels more specialized, especially for fish. We donât buy fish that often, so it gets less use, but when we do, itâs a game-changer.The blade is crafted from three-layer composite steel with a VG10 core, just like the Santoku, and has a hardness of 62HRC, ensuring incredible sharpness and edge retention. The hand-forged craftsmanship gives it an artisanal feel, and the polished edge glides effortlessly through even delicate ingredients. Itâs durable and easy to maintain, which is a big plus. The handle is also stunning, made from Red Cinnamon wood with Ebony near the blade and a Turquoise inlay. Itâs not just beautiful but also ergonomic and comfortable to use. The balance of the blade geometry makes it feel precise and controlledâperfect for slicing fish or more delicate tasks.I recently saw an omakase chef at a high-end restaurant using this type of knife during our meal, so I feel like weâre on the right track! Having both the Santoku and Kiritsuke knives covers all the bases, whether itâs general meal prep or more specific tasks like handling fish. The Kiritsuke even comes in a luxurious wooden gift box, making it feel extra special. If youâre serious about cooking or just want a versatile and high-quality knife duo, these two knives work so well together. The Santoku is the daily workhorse, and the Kiritsuke adds a professional touch for more specific needs.

When we went to Japan, we wanted to buy a knife but we were a little overwhelmed by the selection and didn’t really know what we need but it was always on our mind to get one eventually. This Japanese knife is such a work of art – both in looks and performance and it came beautifully packaged in a wooden box.The blade is made from three-layer composite steel with a VG10 core, which makes it incredibly sharp and durable. You can tell right away just gently touching the knife’s blade that it is super sharp! With a hardness of 62HRC, it cuts through meat, vegetables, and fish effortlessly, and the balance of the blade makes every task feel precise and controlled. What stands out is the craftsmanship. Itâs hand-forged by skilled artisans, and you can tell by how sharp and smooth the blade is. Itâs even easier to re-sharpen compared to machine-ground blades, which is a nice bonus for long-term use. The handle is not only ergonomic and comfortable to hold but also beautifully designed. The combination of Red Cinnamon wood, Ebony near the blade, and a Turquoise inlay gives it a unique and artistic vibe. Itâs not just a toolâitâs a statement piece for the kitchen. If youâre looking for a knife that delivers on sharpness, durability, and style, this one is definitely worth considering. Itâs perfect for everyday cooking or delicate slicing tasks and feels like itâs built to last a lifetime.

As a fan of Japanese knives, particularly the 15° bevelled blades, I appreciate the quality and craftsmanship these knives offer. The Kawahiro Kiritsuke, while a beautiful piece, should not be judged from a Western chef’s perspective, as it is designed with Japanese culinary traditions in mind. The 21 cm blade features a slight curve and a reverse tanto tip, also known as the K-tip, which resembles a petty knife protruding from the blade. This design is ideal for mincing garlic and shallots, tasks integral to Japanese cuisine. With a blade height of 4.5 cm, there’s ample knuckle clearance for comfortable use. This Kiritsuke knife’s bi-bevelled edge is a modern take on the traditional single-bevel design. Unlike Western-style knives, it lacks a bolster and the tang inserts straight into the handle, with a 1 cm protrusion curving around the blade. This unique design is tailored for a specific grip: pinch the blade with your thumb and index finger, while the middle finger rests on the rounded tang extension. The weight is balanced at the heel of the blade, ensuring stability during slicing. The blade thickness is 3 mm at the spine, rigid and unyielding. While artistic carvings decorate the blade, they are not Damascus steel markings. The handle, made from a composite material with a wood-like finish, is polished and comfortable, though it is designed specifically for the traditional grip mentioned earlier. In use, the Kawahiro Kiritsuke excels at slicing meat, especially sashimi, and vegetables, as well as performing rotary slicing on daikon radish. However, it is not suitable for the Western-style chopping or rocking motion. If you’re seeking a knife with a 15° bevelled blade for those tasks, consider a Misono or Takayuki. For those who want a knife tailored to Japanese culinary practices, the Kawahiro Kiritsuke is a solid choice.

Definitely not a knife you use for anything rough, but will treat you right as long as you treat it right. Slicing meat, fish, veggies, etc. has never been easier with such a sharp knife. Now, I’m not the most experienced knife user or knowledgeable but I will say this knife certainly feels nice to use. You do have to be wary though as it’s very sharp, as mentioned before. The handle takes some time to get used to and you’ll have to hold it in a different way. I do like that the handle has edges to it instead of just being smooth all around so it’s easier to grip. The handle also is made out of beautiful wood and ties the knife together as an art piece. You could say the same for the blade, it’s a beautiful blade that can be displayed as much as used as a tool. They do recommend using a whetstone for sharpening as it’s a better way to keep the edge. Most people won’t have the time or the know-how to do so it’s a little tough. However, you definitely should take care of it as it’s an expensive knife. If you treat it right it’ll treat you right by slicing everything you can think of easily.Overall, this is an amazing knife that I hesitate to use because of its beauty. But it’s well worth it as it’s excellent in its performance.
