    Soooo nice
I recently purchased the JOYCE CHEN Classic Series 14-Inch Carbon Steel Wok with Birch Handles, and I must say, it has exceeded my expectations! The wok is beautifully crafted with high-quality carbon steel that heats up quickly and distributes heat evenly. This makes it perfect for stir-frying, sautéing, and even deep-frying. The 14-inch size provides ample cooking space, allowing me to prepare meals for my family and friends with ease. The birch handles are not only sturdy but also stay cool to the touch during cooking, which is a great safety feature. I also appreciate how lightweight the wok is, making it easy to maneuver around the stove. The wok has a seasoned coating that improves with each use, enhancing its non-stick properties over time. Cleanup is straightforward, as I simply wipe it clean with a paper towel after each use. Overall, I’m incredibly happy with this wok. It’s well-designed, functional, and has become an essential tool in my kitchen for creating delicious Asian-inspired dishes. I highly recommend it to anyone looking for a quality wok for their culinary adventures!

Great wok at a good price
This is a carbon steel wok with a flat bottom – it’s in the description but somehow I missed that and thought it had a round bottom. However, as it turns out, I am happier with this flat bottom; even on a gas stove, I think it works better to get heat to the food since I’m not cranking huge BTUs.
I’ve had it for about a month and seasoned it according to the directions on the blog Woks of Life. Even with scrubbing first, the initial fumes are… really strong. Make sure you have good ventilation when you do this because wow. However, once that seasoning was done, I have not noticed any other off odors or remaining factory oils. It was reasonably non-stick right away, but after several weeks of use was really great. I clean it with a Scotch Brite type sponge, using the scrubby side. Soap if necessary. I then towel dry and heat it back up to make sure it’s completely dry, then coat with just a tiny bit of oil. Grace Young says in Stir-Frying to the Sky’s Edge that this is not necessary, but I feel like when I do so it’s helped the nonstick nature to develop further. Perhaps after longer use I won’t need to do that anymore.
I have not noticed any rust, even one night when I (oops) forgot to clean it after making a vinegar-based sauce. The next morning it was just fine. I do think it’s important to clean and dry immediately, as a general rule, and you shouldn’t have any problems.
The handles seem very securely bolted on. The weight of the carbon steel is just right – it responds very quickly to temperature changes and it’s not too heavy to move around a lot with one hand. I recommended this wok to a friend and they are also very happy with it.

    Defective And/Or Poor Quality!!
I purchased this with high hopes since I had seen that Americas Test Kitchen recommended it, amongst a few others. I am familiar with this process and know how to properly season, however, I even watched the accompanying video to make sure I was in-fact following the proper guide for this specific product. The pan comes as shown in a light patina and after seasoning becomes dark. I started by boiling water which is what is mentioned in the video. I did the same level of flame and time and the bottom came out with an almost pretzel looking image!! I’d laugh but the whole thing is honestly so frustrating!! Even though this definitely seemed odd to me I proceeded to clean and dry and then season, again as instructed! After seasoning I began preparing my stir fry, however, while the ingredients, with some accompanying olive oil, at first seemed to not stick, after a couple minutes it was sticking like glue! I honestly had to keep dousing with oil to prevent sticking, and to no avail. The seasoning of the pan clearly did not work. Honestly I would not waste your time, I would look for a higher quality and I’m sure it will be able to be properly seasoned like others I have seasoned in the past. I have gifted previous ones that’s why I was in the market and experimented with this, but clearly the price is probably a big factor as to why it’s made so cheaply! Although in that case it shouldn’t be on the market, like many other poorly made things. Honestly unless mine was defective, which I doubt since it did come looking pristine, although there could be some internal manufacturing defects, I would I steer clear!!

    Solid wok for a beginner
I’ve been wanting to get better at wok cooking ever since I got Kenji Lopez Alt’s “The Wok” cookbook as a gift. This wok has been my trusted companion as I hone my craft. It is a good size, seems to have solid build quality, has a good balance between feeling hefty while light enough to maneuver, and looks nice hanging in my kitchen.

    Great wok!
I bought this in 2019 and this is what it looks like in 2024. I’ve lived in Louisiana, Germany and now Texas (got to love that military life!) and this thing has lasted… as long as you take care of it. That means a proper seasoning, wiping off quickly after use, drying, then light oil coating.
Pro tip: use a turkey fryer to get this puppy ripping hot! The average stove is just not hot enough that stir frying requires. A turkey fryer does the trick! Plus all that super high heat is best for outdoor cooking anyhow.
    I would recommend this purchase!!!

This is one of the worst products I have bought from Amazon. Seasoning instructions obeyed to the letter caused uneven black with ridges. Smoked so badly I had to throw it into the garden.
