fryque –
Great paring knife.
Very nice knife. Heavy feel. Very sharp. I tested it on carrots and had no problems. It is a bit heavier that a lot of paring knifes. The Damascus finish is attractive. And with the multi-layer I expect it to really last.
Trek Biker –
Wide blade, extremely sharp.
This Pairing Knife is razor sharp, so much so I really wish a protective sleeve was included. The blade is wider than all other pairing knives I have had. Knife is well balanced and feels good in the hand and cuts very well. The Pakkawood handle is good size and adds to the good hand feel. Mine has a little flaw in the wood, which is disappointing as it is so attractive. Sliced through tough broccoli like butter, validating that a sharp knife is safer to use than a duller one. The Damascus steel does not look like layers of steel I have seen in examples of this type of steel? I am dropping a star for the nick in the handle and not including even an inexpensive sheath.
