Global is the best knife!
When I read that Anthony Bourdain recommended Global knives I replaced 4 knives in my knife drawer and bought my first whetstone. Global seems fitted to my hand, both weight and size. I’m a home cook and ‘made do’ with knife hand me downs for years. No more! Very happy with these.

Really nice, came quite sharp ootb.
Just ordered this I think late Saturday and it got here already, wow was that fast!My first impressions are this is a really nice knife with exceptional fit and finish.It feels good in the hand and is light.Easy to clean.Blade is sharp out of the box. It shaves my arm hair out of the box, but with a touch of effort.Could use some slight work on a high grit stone I’d imagine if you wanted it to be absurdly sharp, maybe even just a strop, but this knife is sharper out of the box then my Shun Classic 6 inch chef knife, my Tojiro DP 240mm Gyuto, any of the midrange of the higher range Henckels I’ve used, along with the Fujiwara FKM Gyuto, a couple other random Shun’s and some other random knives.Blade has a nice short profile to do what a parer should do.I’ve only put it through about a dozen cherry tomatoes, some strawberry coring and halfing and minced some garlic with it for the hell of it even though I prefer a chef for the latter.So far I’m very happy with it. I’ll comeback and do an update in a week or so and then again in a couple months. In a week or two when I’ve really put it through it’s paces, if it’s still holding up and a joy to use, I’ll up it to 5 stars.On a simple initial impression I’d definitely recommend this knife though.

If you are unaware of Global then invest in just one to see how good they are. Supremely well balance, easy to clean, they maintain their sharpness well in excess of other brands. Note that it’s wise to invest in a global sharpener too.
Before ordering this knife I knew about Global just because of their distinctive look and reputation. I had avoided their products because I did not think they were aesthetically as nice as some other Japanese brands. This knife completely changed my mind. The quality and the craftsmanship is top-notch and everything that would be expected from a quality Japanese product. And even the overall look in person is really eye catching because it is so different from everything else with ‘typical’ handles. This paring knife will not disappoint.

C’est un outil qui m’est devenu indispensable !Ce couteau est d’un tranchant que je n’avais jamais connu. Il faut faire très attention car la pointe ou le côté pointu de la lame situé près du manche percent la peau des mains avec une facilité déconcertante.Le produit est très cher, c’est incontestable. Mais je pense que la qualité est au rendez-vous.Je m’en sers actuellement pour découper des canards gras et l’exercice n’a plus rien à voir avec ce que je faisais avec mes anciens couteaux.
