Nice cookie sheets
As cookie sheets go, these are pretty standard. Nothing extra special, but do you really need much from a cookie sheet? Especially when I usually coat with tinfoil and/or parchment paper whenever I use them. For a 3-piece set I feel like it’s a little pricey, but maybe that’s just me.

Small, but functional and inexpensive
This is a great set of baking sheets for basic use, ideal for someone just outfitting their first kitchen or someone in an apartment without a lot of space. The sides on these pans are not high at all and they nest nicely. The small one is good for single serving vegetables, the larger ones are better suited to cookies or sheet pan meals- you’ll need the larger size for full meals because the sides aren’t high. I did cinnamon rolls on them this morning and they came out nicely, although I do use either parchment paper or aluminum foil on every pan. They heated evenly and baked well. The major downside of these pans is the shallow depth and the fact that they are handwash only. They seem very well made and should last a while. I have had Gibson dishes for years and love them for both their functionality and value.

Nonstick and versatile
This is a great starter set for anyone just starting to cook or bake for a small number of people. It is wonderful for the now popular sheet pan meals where all the items (veggies and meat and potato) are all cooked on the same sheet pan in the oven. It makes clean up quick and simple because the non-stick surface really works especially if you use parchment paper or a nonstick spray with you food items. I especially like using the small pan (quarter sheet) when cooking for just my husband and I. It fits easily in the dishwasher where other larger pans don’t fit and are not really needed for one meal. These pans are listed as being safe to 440 degrees. I am not sure if that means that the non-stick coating begins to degrade at that temperature. I know that above about 400 or 425 they tend to warp and twist in the heat and definitely if they are under the broiler. This is not a problem as long as you are not baking something that requires a completely flat surface (a jelly roll) or something that has a lot of juice or drippings (the liquid will drip/spill). Overall, this is a great starter set for single person or couple who are not going to be cooking large quantities. If you want to bake a big batch of cookies it will take too long using just these pans. You would be better off with multiple large pans.

Nice, Lightweight Baking Sheets
This 3 Piece set of Carbon Steel Nonstick Kitchen Baking Pans from Gibson Home is great. I love having three different sized pans. These pans are solid, but they’re lighter weight than my previous cookie sheets. I didn’t realize just how heavy my old pans were until I got these.The only real drawback to this Gibson Home set is that the cookie sheets are “hand wash only”. Life’s too short for handwashing, so we throw these bad boys in the dishwasher. So far, no issues with that, though I expect it may make the pans rust prematurely.
