Very happy with this knife
This may be my very best Amazon purchase ever. Except for the ubiquitous bulletproof plastic packaging which I had to use metal cutters on in order to open, Im so happy with this knife. It immediately got a strong test of sharpness, as I had warmed a piece pf pork shoulder – most of which went into pulled pork. Why was it such a strong test? Because the meat was so completely falling apart done with a strong tendency to shred, but I wanted to slice it cross grain. All but impossible with ordinary knives. This went right through – no problem. It would have simply mashed up & fallen spart with another knife. I tried it on a tomato & some broccoli too. Superb slicing. The steel appears to be of the highest quality and I believe it will be very durable if properly cared for – dried & stored properly – using a sharpening steel only until it becomes absolutely necessary to use a more aggressive sharpening method. The handle is ergonomic, fitting my small hands well & yet still appropriate for larger hands. I cannot imagine how much engineering went into this in order to cover so many bases so well. This knife was recommended to me by a chef. I can only say Thank You for such good advice!

I can’t say enough good about this knife. I’ve owned and loved my Victorinox 8″ Fibrox chef knife for some time now at the recommendation of America’s Test Kitchen. Then I found out about this brand (Dexter) through friends that work in commercial kitchens and quickly came to learn that Dexter is one of the MOST popular brand of knives used in commercial kitchens today! So after hearing that, I had to pick one up and find out what all the fuss was about, and also see how it stacked up against my Victorinox 8″ fibrox chef knife (which I love).Once I started doing more research about the Dexter company, I came to find that they are located right in my home state of Massachusetts, and that they are the oldest knife maker in the United States, founded in 1818. Dexter was also the first company to start producing knives with synthetic (plastic-type) handles. I also read that each of their knives are individually sharpened by hand before they leave the factory.Once I received my knife, I noticed that Dexter even takes care to make sure that all of their packaging are made from recycled materials and are eco-friendly, with attempts at creating a smaller footprint. Very well done Dexter!After removing the knife from the package, I immediately took note of how comfortable the handle was. Extremely ergonomic and comfortable! It became immediately apparent why these knives have been used in commercial kitchens for so very long! The next thing I noticed was that the edge came sharp, very sharp in fact! As a professional blade sharpener, I was quite impressed with the factory edge, and only quickly touched it up so I could achieve a hair popping edge.After a few weeks of heavy home use cutting lots of veggies for asian stir fries, salads, and other dishes, I must stay that this Dexter has quickly become my baby! I’m so impressed with the level of performance and the level of comfort that this knife employs! Let me tell you folks, this knife is a must have! It also costs less than the Victorinox chef knives!As if this wasn’t enough, here are some of the added benefits of this Sani-Safe series of Dexter knives – Built to be both tough and sanitary. Not expensive just wonderful
I have so many knives, but I couldn’t pass this one up. American-made, super sharp and big. I love mine. I read that chefs actually use knives like these instead of their fancy expensive knives. I can see why. I used it the first time to chop large pieces of meat into bite-size and that long blade really helped. It cut down the time when you have a lot to cut up. I would buy again.Also I kept the plastic packaging and cut it to make a holder for it. I just slide that big knife under a rack I have in my kitchen.

Very sharp, good knife.
I have used crappy walmart knives for quite some time. I was a bit shocked just how sharp this one was but it has been great. The handle is a little rough in my hand but overall it’s a good weight, good size. I made the mistake of getting the 10 inch one first and thankfully was able to return it for this one. This is a good sized knife.

I have owned several of these knives and my older ones seem to just stay sharper longer even though itâs supposed to be the same steel other than that these are wonderful knives

Learn about carbon steel before you buy this
When I made the decision to upgrade my kitchen knives I had a difficult time settling on my large chef’s knife or cook’s knife as Dexter Russell calls this. I read as much as I could about kitchen knives at discussion forums like Chowhound and after reading the original review here and the handful of reviews of some of the similar models I rolled the dice on this.I really like the light weight of this knife and having used a smaller 7″ chef’s knife for many years appreciate the nimbleness. The white handle provides a natural grip that gives you solid control over the knife. This cook’s knife just has a substantial feel to it while not feeling heavy.Update: The knife stained after cutting my first onion with it. Have since learned that carbon steel knives naturally stain to prevent rust. The product description describes this knife as stain-free and I ended up returning it. I stand by my comments as far as the handling of the knife but the staining may come as a surprise to some people who buy this.

Sharp Sharp Sharp
Only issue is it does start to have brown spots on it after a couple weeks of washing it. As far as keeping an edge and performance, its fantastic. Its worth the price and it will take whatever you throw at it. My wife doesnt like the extra length of it but I find I have more control when using it. I highly recommend. I’ve heard nothing but great reviews from real chefs kitchens using these knives for years so I look forward to updating later on.
