My Mom passed away suddenly in Jan ’22. She left behind pots and pans in the kitchen. Some of which are older than I am. However, she also left behind a few cheap pans she got a Walmart. She didn’t use those pans all that often, so when I got them, I started using them. Especially her square griddle pan. I LOVE cooking on a hot griddle and for something simple like a burger or a chicken breast, it is easier to just cook it on the stove using a griddle pan.Well, the red one began to warp and bow up in the center. It wasn’t very noticeable at first, then the center began to rise far enough that any butter or oil I was cooking with settled around the outer perimeter of the edges. I didn’t want to buy a cheap piece of cooking equipment again that would just get thrown away in time as well.Then I stumbled across Blue Diamond Pans. After reading about the surface of the pans being safe for steel cooking tools, and not having a non-stick coating that would wear off in time, I ordered the square 11″ griddle pan and a smaller 8″ skillet for making eggs. I was able to throw away 3 pans and replace them with these two Blue Diamonds.So far, so good. I use both of these pans daily. The small round skillet is solely used for making eggs in and nothing else. The square griddle pan makes the vast majority of my meals now. I love the flat cooking surface and the best part of all, is that, because nothing sticks to these pans, cleaning them is a breeze. Simply remove the food, and grab a couple of paper towels if there is oil or grease to be soaked up. Otherwise, like the dedicated egg skillet, I wipe it out with a hand towel while the pan is still hot. Then, run it under a bit of warm water and gently rub it down with a bit of dish soap on a rag or a scrubber pad. My pans are clean and back hanging on their hooks before I eat. They are just simply that good at cooking food that doesn’t stick to them.

Huge! Well made but curved in the middle.
This pan was a gift for my husband for our 10 year wedding anniversary, and it was a huge hit. It’s HUGE, well made, and nice and flat. It holds 4 small pieces of bread easily. I say small because we have to have GF, and they make that bread tiny for some reason, so I don’t know how well 4 standard slices would fit. This does French toast and grilled cheese like a boss though. My only minor issue was when I tried to fry eggs in it. The eggs pooled toward the outside edge, which makes it difficult to get to cook well. Some of the whites were still in the middle and cooked quickly, but the bulk of the eggs was on the edge. So I had to move the pan around a lot, and the eggs didn’t end up coming out very nice since they weren’t cooked evenly. I only grabbed this one for eggs because I was using my other large pan to make corn beef hash for fathers day. I’ll just stick to my other pans for eggs and leave this big guy for sandwiches and toast. The pan is very well constructed and looks like it will hold up well. I will just have to see if the coating holds up.

Happy So Far – Potential Problem With Baked On Oil Residue
Update 2023-01-09 Changing oil made no difference. Been using this griddle just about daily for over 2 months and there’s not a spec of discoloration or gunk build up on it. Clean up has been dish soap and a micro fiber wash cloth. So far I’m very happy with it. Since the bottom is not terribly thick you just need to be wary of applying high heat.My last griddle was an expensive one from All-Clad. When the non-stick surface started to fail after 6 months I contacted All-Clad. Even though I had followed their directions they refused to honor the warranty. So I said never again. I came across the Blue Diamond brand and the reviews were good overall so decided to take a chance on a bargain brand. I use it almost every day for eggs, sauteed veggies, browning chicken, etc. Always use medium heat with a light coating of oil. Very happy with the results. However I started to notice a buildup of a dark rough patch on one part of the griddle. No amount of washing would get rid of it. I decided to take a chance and drizzled some mineral spirits on the rough area and let it sit. After 10 minutes or so the rough residue wiped off with some vigorous rubbing with a paper towel. I suspect a cheap brand of canola oil I was using may have been the culprit. After a hot soapy wash the griddle is like new again. Plan to switch to a different oil with a higher smoke point and see if that avoids the problem.

Slippery big surface, itâs a dream to clean and of course easy to get the spatula under what youâre cooking.Only negative I see is the rating for high temp, but the instructions always say use low to medium heat. Not always possible when searing stuff!
