I’m at an age where my family consists of 5 dogs now, love my boys and feed them fresh foods. I do alot of cooking, experimenting new dishes for publication, there’s hours of prepping … especally chopping & chopping!! Lord! Lots of chopping. Anything on the “yes list” for dpgs…Veggies fruits nuts, herbs & Meats…So I’m obsessed w/a sharp blade. At 68 & arthritic your tools need to be in good condition. Take yesterday, I prepared a large hunk of Top Round beef about 7lbs. Cutting when raw then after the braise I could cut it nearly paper thin…like a electric slicer..7lbs of an 1½” thick medium skirt to be tender enough to simulate Roast Beef.. Beautiful! The weight of this knife & size is perfect to control eye/hand coordination. I have 2 very expensive Damascus blades and this little knife sits close to them. I really like this little guy, very comfortable in tackling everyday tasks…infact I’ve had it for a couple months & yet have had to tend the blade aside from the leather strap. Did I mention I’m Obsessed w/a sharp knife? I know find myself with this knife in my hand as soon as I start cooking. 2 thumbs up.

Love this knife. Very well balanced and well made. Well honed out of the box and keeps an edge well. Some might find the blade width when chopping a little intimidating but I have always preferred a more lithe blade in a six inch.
