Sharp! Nice addition to my kitchen
This is my second Paudin knife. The ergonomically designed handle and the sharp blade make my cutting/slicing/chopping job effortless and so efficient. This Damascus knife costs a little more than my first regular Paudin chef’s knife. It’s even sharper and worths the premium. Love it!

I really like the PAUDIN Damascus Chef Knife, 8 Inch Kitchen Knife. I have a couple of others that are larger but this one has become my go to knife for a lot of kitchen work. The handle feels great in your hand and the blade is sharp and sturdy. it also looks real nice. I have been using it for a few weeks and it has not needed to be sharpened yet so I can say it holds an edge well. It woudl also make a great gift for the home chef in your life.

Professional Quality Damascus Knife and Very Sharp
We have 3 professional chefs in the family and one amateur chef that easily could go professional. Iâve been replacing our kitchen utensils with higher quality items. One of the most important areas is the knives we own. We have an older set that has served us well, but this year part of upping our game is adding Damascus steel knives to the kitchen.Why Damascus steel? Historians think Damascus steel was first made around 1500B.C. in the Persian area. When people fought before gun powder was discovered people used swords. This one who owned the strongest and sharpest sword was usually the victor. The Damascus swordsmiths discovered the more steel was pounded and pounded in layers the stronger steel becomes. Adding layer upon layer of pounded steel made a strong sword that could be made into a very sharp blade. These swordsmiths is added gold, silver, and copper to make beautiful surface patterns on the pounded steel. Pounding steel changes the directions of the ions and atoms in the steel which makes the steel stronger. Layering pounded steel made a blade stronger yet. Damascus steel is used today to make strong knives that hold their edge for a long time.This Paudin knife is a fine example of Damascus steel. The knife itself has several items along with the Damascus steel that denote it’s quality. The tang runs the entire length of the handle. This prevents a knife from breaking off at the handle area. The tang has three rivets holding it in the smooth fiberglass handle. When holding the knife it feels well balanced and very comfortable in the hand. I am able to cut very thin slices of vegetables, fruit and meat because the blade is so sharp. The sharp blade makes it so less force is required to cut through the food items.Keeping good knives sharp and having them last for years, even decades requires proper care. We always hand wash our work knives. The dishwasher ruins the blade of a working knife. We store our good kitchen knives in a wooden block. We use them on soft cutting boards like wood, never cutting directly on the hard granite counter. When a knife feels like it’s losing its sharp edge, we sharpen the knife with a honing rod or a whet stone. Both ways have a learning curve to be used properly. We also only use our good knives to cut food, and NOT frozen food. We don’t use the knives to chip ice, cut paper or any non-food product. And we don’t use our knives as makeshift screwdrivers (a lesson one family member learned the hard way and that knife is now missing its tip as well as having a warped blade).I’ve purchased a few Damascus steel knives this year. I feel this one is very nice quality and priced fairly for the quality and value it offers. The three chefs and the amatuer all agree this is a beautiful knife.

Fantastic set of knives
I test a lot of knives in my review queue and this set has to be one of the best I’ve tested in the last two years. These three knives are of surprisingly high quality. I had my doubts, as I do with most knives that come out of China, but lately some of the better ones are coming to market in the US. This is one of them. These three knives roughly equal some of my mid-line Shun knives in quality of build. All three are VG10 steel, one of my favorites for kitchen knives, as they have a good hardness that maintains sharpness for longer than European steels, yet are not so brittle like higher end Japanese steels, while remaining stainless for every day kitchen use. The steel itself is beautiful, I believe it’s a 67 layer san-mai technique Damascus, legit technique not laser etching as a lot of these online Chinese blades are. The handles are refined and smooth, synthetic G10 scale but looks and feels a lot like Pakkawood. Even the little crest in the handle looks high end. Everything about these knives scream expensive while not being super expensive.It comes in a nice gift box, so suitable for gifting a new chef. The three blades are an 8″ Chef’s, pretty standard, a 7″ Santoku, and a 5″ Utility, a good all around set, although I would prefer a 8″ Chef’s, 5″ Utility and 3″ Paring as a better more versatile set for a kitchen, as people tend to use either/or Chef’s and Santoku, not both. The grip is forward of the bolster, balanced slightly ahead of the heel of the blade. The finish of the knives are good, with no rough edges. The heel of the blades allow for fine heel detail bladework and the grip is comfortable for it. Overall, these are knives I think should cost twice as much, and if not for you, for someone who would really appreciate these.
