Bei richtiger Pflege bleibt es anhaltend scharf – das Messer sollte zum Schneiden verwendet werden, dafür ist es gemacht. Nicht zum Hacken. Bei geeigneter Unterlage und Pflege (mit zB einem Keramikwetzstab) bleibt die Schärfe jahrelang.

Très bonne tenue en mains.L’âme de la lame en VG MAX est à la fois plus dure et cependant plus facile à affûter que le VG 10, qui est plus courant et moins cher. Le tranchant tient bien dans le temps.Bien sûr, il y a le prix. C’est quand même un couteau pour passionnés.A noter que neuf, le tranchant n’est pas très affûté. C’est classique pour les couteaux japonais.J’affûte à la main sur pierres à eau. D’abord 400 puis 800. C’est bon.Après quelques affûtages, on obtient un tranchant superbe.
