Bought this knife right at a year ago. Went with this one because I just cook at home, didnt have a cleaver already, and didn’t know if I’d really need/want to ever use one. So I didnt want to spend a whole lot of money on yet another *thing* that I will end up throwing in a drawer and forgetting about until the next time my wife tells me we are accumulating more clutter and have to start throwing stuff away. So my 0.02 on this:1) I actually use the hell out of this thing, useful way more than I thought it would be. I’ve probably used it for dinner prep 2 to 3 times per week since. So if you are thinking about getting a butcher’s knife for the first time, yeah you will be glad you have one.2) The Knife itself is actually really good: AT THIS PRICE POINT.It’s well balanced, and good quality. It was razor sharp out of the box, and had good weight. I’e used it frequently for a year, and have not YET had to do anything except use a steel on the edge.That said, a year in I need to re edge it. I’ll probably just upgrade to a good medium quality knife that is of a significantly higher quality steel. Worth the money for me to have a Butcher knife.So if you are looking for a knife long term, for regular use? Keep looking.But if you are like me and dont know if you’d actually use one, or if you know you’d use one less frequently? It’s a good deal.

Good clever at a shocking price
A Chinese cleaver is the most useful item I use when I am allowed to use the kitchen. It makes cutting, slicing, chopping easy and the broad front is good to stir things in a pan. I put the broad blade over garlic cloves, pound them with my fist to crush them and then chop them up fine. Combine them with chopped parsley and butter, use the cleaver to cut the backs of lobster tails, pounding the back of the cleaver with your palm to split it, fluff out the meat so itâll come out easily, stick it in the oven for 25 minutes and youâre done. Voila. A gourmet meal.My cleaver of choice cost me $5 at a garage sale ten years ago. Wooden handle is cracked, blade covered with rust. I explained to my domestic goddess that the rust just meant itâs good carbon steel. She wanted a new stainless steel cleaver. She didnât want such a rusty relic in her kitchen and was of the opinion I am trying to poison her. She thinks I am a culinary criminal. Guess who won that argument.So I looked at the selection on Amazon and bought this. Full tang is important for safety. That means the metal from the blade goes all the way through the handle so it doesnât go flying off. Stainless steel, wonât rust, which is important to 50% of my domestic population. And price. Ten bucks. I figured any cleaver I could get for a sawbuck would be awful. But this thing is really good. Sharp and beautifully made.Domestic tranquility for the Hamilton.Buy it.

Great deal
I’ve always pined for my Dad’s stainless steel Chinese vegetable knife. His isn’t quite as tall as this, but also is less “polished” and a bit lighter. I’ve searched high and low for a replica, but of course his is generic and most likely from a bulk kitchen store in some China town from decades ago.I purchased a Japanese Nakiri in the ~$100 range as a substitute, but is heavier, much nicer, and I can’t bring myself to throw it in the dishwasher.Given the price I figured this was worth a shot. It is sharp and I use a honing steel regularly so it stays sharp. Its lighter than the Nakiri but not as light as my Dad’s. Its also taller than my Dad’s, which is good in some use cases, but I wish it were a 1/2″ shorter at least. The handle is comfy. The best part imo, is its stainless and cheap so I throw it in the dishwasher every time without hesitation.I didn’t give it five stars as I noticed a rust colored stain smeared across some of the engraving near the handle…unsure what it is but it doesn’t wash off or change and I’ve been using this for 6mos. It has me a little concerned that this might be lower quality steel and it might “go bad” at some point…esp w/ my dishwasher use. If it did get worse to the point to where I thought it was an issue I’d still probably buy another one of these.

I love this knife. It is a quality buy, great balance, functional and excellent grip. I washed the knife by hand and in the dishwasher no rust. I have used this knife daily now for a month.

Extremely sharp knife that it’s like a lightsaber for meats but I find chopping veggies to be better with a pairing knife. I was hoping this could be great for both. That’s likely just my style of slicing and dicing though.I find the balance isn’t great with the knife wanting to tilt forward. I think this is due to the handle being a bit hollow. If it was better balanced I would have given it 5 stars, but I’m still very happy for the sale price I got it for.
