Finally, a Sharpener That Actually Works for Me
I have an old chefâs knife that Iâve been using for years. It wasnât cutting well anymore, but I didnât want to replace it because Iâm so used to it. Iâve tried a bunch of cheap sharpeners before, and honestly, they didnât work well. I even gave sharpening stones a shot, but those are so tricky to use, and I never got the results I wanted. Thatâs why I decided to try this sharpener, and wowâthis sharpener brought it back to life in just a few minutes! I’d call this selectable and not adjustable but it’s nice
This has a few selectable angle options and only for the coarse mode. The “fine” part is fixed.The coarse will tear little shavings off of a hard steel, swiftly and leave it with an edge that’s consistent and as steady as your stroke. This is usually pretty easy to handle, but sometimes a blade can torque a little and things bite it. Mostly, I find that centering the blade and not pushing it into the sharpener avoids this.(If you want perfection, you should probably 1. buy a jig sharpener. 2. correct your expectations.)For keeping things nice most of the time, a ceramic “steel” is still going to remain my tool of choice, since most of the blades I maintain are 15 to 18 degrees, and the “fine” section on this looks to be at 20 degrees or so. Even if it wasn’t, that looks too aggressive for basic maintenance; a steel removes far less metal, prolonging the useful life of the blade in comparison.This is good for what it’s designed to do: getting a blade sharpened to a set angle swiftly when it’s gotten excessively dull. If it’s dulled, but the lines are still sufficiently stable for a steel, you should almost always use a steel. Sometimes, though, you need speed, and this can provide that. Further, sometimes, the blade has dulled beyond the point where using a steel will work in a reasonable amount of time. Again, that’s when you remove significant metal, and this helps you do just that, in a controlled fashion.I expect the wear on this to render the 15 & 18 settings useless the fastest, but that’s because I expect this to see considerable use in the coming years and these things eventually wear out.

Easy to use
I used knife sharpener steel bar for my whole life, and this is the first time i try the knife sharpener tool. This is so much easier than i original thought. Highly recommended. the instruction is very straight forward, and easy to follow, the angle is based on the type of knife. I recommend use 15 to for American knife, and 20 for Asia wide knife. It works for Knife as well, amazing.

Damn, that is one great sharpener!
Absolutely the best knife sharpener I have found yet. The fact that it is adjustable is a feature you do not want overlook! The handle is shaped to your hand correctly making it safer than others not like this. I’m a chief,and my knives are the tools of my trade so I keep them nice and I keep them sharp. I guarantee there will be one of these sharpeners in each of my Souse Chiefs next Christmas.
