    Blade scratches? Who cares, read on.
    If you’re the kind of person who is going to get serious about your kitchen cutlery, if you plan on ever owning things like a chef knife that costs $200 or more, you NEED to learn how to maintain it yourself. You won’t get value for your money over time from a knife that’s become dull, even if you spent $1,000 on it. (And there is no such thing as a knife that never needs sharpening!)I actually work at the only place in my city (that I’m aware of) that still offers “professional sharpening,” and I wouldn’t trust my kitchen knives to my own workplace, or even MYSELF at that workplace. We don’t have the TOOLS there to do what I would consider a good enough job for my chef knife, or honestly even my pocket knife. “Professional sharpening” at a high quality level just isn’t a thing anymore in the retail market.If you care enough about cooking to buy expensive knives, nobody else in the world cares about those knives as much as you do, and nobody else has to cook with them.The cool thing is it’s not DIFFICULT to get very, very good at sharpening knives. The only bad thing is it takes a LOT of repetition… that’s all… repetition. The only “trick” or “hard part” about mastering knife sharpening is training your muscle memory to do the exact same motion, angle of stroke, every time, and the ONLY way to train that memory is to do it thousands and thousands… and thousands… and thousands… of times. As you repeat the motion, the more you do it right the better you get at it, but the more you do it WRONG the more you have to practice to get it right. That’s what the guide is for.The way this product and its guides are designed, it’s perfect for learning to sharpen. It REALLY helps, if you take your time on each stroke, to get it just right every time, in both directions. That minimizes your WRONG strokes, so every stroke you ever do is a good one, helping train your muscle memory faster without wasting time. It’ll still take you 10,000 strokes to get good at it, but you won’t waste 5,000 strokes.To me, that’s worth scratching some blades. I’m not going to spend $200 or more on a knife before I know how to properly care for it, so I’m gonna have other, good but cheaper, knives that I know I’ll replace. Scratches don’t really hurt the knife, its ability to make cooking a pleasure in my kitchen, I just know that when I DO buy really expensive knives, I won’t want THOSE scratched up.So my recommendation and review is:If you’re someone who thinks you WILL eventually get REALLY nice, expensive knives, buy this sharpener now, before you do that. Use it to LEARN with cheap, $20 Walmart knives you don’t care about, or a $150 Henkel that’s a good knife but you’ll eventually replace anyway, and don’t worry about it if you get scratches on those. Then once you get good at sharpening, you can get a different stone (or just remove the guides) and not worry about scratching up higher-end knives.By the way, I gave “ease of use” 3 stars because this product does HELP, but there is no product that makes knife sharpening easy. The ONLY thing that makes it easy is practice, and this product got more than 1 star there because it does help make practicing, itself, a lot easier.

    A great find
    This is an excellent product, filling for me an important need. Like many people I’m sure, I have no expertise or skill in sharpening our many knives around the house. Over the years, I have bought and tried to use many devices that claim to be easy-to-use and effective sharpeners. In every case I have not been able to use them properly, and I am inclined to blame not only my lack of know how and skill, but also the effectiveness and quality of the devices themselves.This product, the Sharp Pebble sharpening kit, has solved my problem completely. The sharpening stones and the structure and adjustments that come with it are both simple and well made. The simplicity of actually moving the knife over the stones, the two different grades of stone, is very important because I can see and experience how the sharpening is happening. The guide elements at each end of the structure holding the stones, let me know that I am holding and guiding my movement of the knife properly. And, very, very important, the kit comes with thorough, careful, yet very simple instructions, including setting up, using and cleaning the stones. For more detail and visual guidance there is an excellent downloadable manual.Finally, I think the price for this is very reasonable. And Amazon’s purchase process is quick and efficient.Very highly recommended.Footnote: while I haven’t needed to contact the manufacturer, I know that they will respond quickly and very helpfully.

    Great Sharpener, Almost Too Fine
    I love using this product to sharpen my kitchen knives, however, the grit is almost TOO fine for knives in poor condition. While this tool worked great for my kitchen knives which I sharpen regularly, it was unable to take out moderate chips in my work knife because even the lower grit is too high.Great for use with properly maintained knives. May need something more robust for work knives.

    Works really well. It takes some time to get the angles right
    The stone feels really good to the touch. I can clearly feel the difference between the 1000 grit and 6000 grit. The stone has to be be soaking wet when sharpening a knife so don’t be afraid of submerging it for a couple of minutes.It took me a couple of attempts to properly get the hang of the angle guides, but once you do, they really help in keeping the same angle. A good quality blade has the same angle everywhere along the edge, so it’s really important to be consistent.One of my knives had become so dull it wouldn’t slice through a tomato: it would crush it. So of course it was due time to restore the edge.It might be redundant but it is mandatory to start with the lower number of grit (so 1000). Lower number = coarser grit = grinds better. Higher number = finer grit = use for polishing. I believe I spent just 5 minutes per side on the 1000 grit and then another 5 minutes per side on the 6000 grit to remove all burrs and have a nice polished edge. In 20 minutes my knife was back to a more than acceptable sharpness despite my absolutely first-timer technique.I guess in the hands of an expert this could sharpen any knife to the level of a scalpel.

    This is the best sharpening tool I have ever used. There is a little learning curve to master the technique but it didn’t take long to get proficient with it. Now it’s like I just bought new knives.

    OK sharpener, price is too high
    This is a clone of about 100 other sharpeners available, at lower prices. The branding is fancier, that’s about the only increase in ‘value’. It works OK, better than a honing rod or whatever crappy sharpener came with your kitchen knives.
